Captiva Cruises and Paul McCarthy hosted a special sunset and cocktail cruise featuring Katie Gardenia, original owner of the world famous Bubble Room restaurant in the heart of Captiva Island.
During a 2-hour cruise aboard the Lady Chadwick, laughter filled the air as Katie shared her memories and stories from running the Bubble Room. She also signed copies of her book "A Bubble Moment," which highlights her recipes and experiences while running the restaurant.
As you can see, John and I got our signed copy. It's a MUST READ if you love Captiva, the Bubble Room and Katie stories, art and recipes. It makes a wonderful gift as well.

Say "I Love Love You"
With A Romantic Dinner
Beef Tenderloin Steak Tartare for Two:
(2) 8oz beef or veal tenderloin filets pounded to 1/8 inch thickness
(3) Anchovy filets
¼ cup capers
(3) tablespoons Dijon Mustard
(1) tablespoons
(4) shots Tabasco
(1) whole egg
(1) teaspoon sherry powder
(1) teaspoon Worcestershire sauce
(1) tablespoon fresh squeezed lemon juice
Mix previous 9 ingredients in Robot Coupe and emulsify with olive oil. (Reserve 2 Tblsp of the emulsion)
Fine dice (brunois) Pounded tenderloin filet.
Prepare (3) cloves finely minced raw garlic,
(1) medium shallot finely minced,
(2) Tbls finely chopped chives.
Fold the emulsified mixture into the diced filet meat.
Add garlic, shallot, chive and mix until incorporated.
SALAD and GARNISH
Skin and Petal (concasse) one tomato
Toss one hand full of baby Arugula in a vinaigrette (balsamic)
Divide in two split and place in the middle of two plates. Mold ½ the Tartare mixture in a pipe mold about 2 in. in diameter and place on top of the bed of Arugula.
GARNISH WITH: Emulsion, fine brunois red onion, ¼ marinated artichoke heart, tomato petals, hard cooked egg yolk and egg white, split caper berry, cipolini onion rings, chive sticks.
