Greetings!

Welcome to the December edition of our Sanibel/Captiva E-Newsletter. 

Ah......the holidays are upon us. We are having another White Christmas.....white sand that is! The hustle and bustle of parties, shopping, celebrations and musical events ......the islands are sparkling and alive with festivities and merriment.

The Captiva Holiday Village extravaganza is in full force. The Golf Cart Parade was a blast!  Luminary on both islands this past weekend was extraordinary..... Still time to come and join the holiday island fun!

Its that wonderful time of year again.  The air is cool and drier. The Christmas Palm berries are a festive bright red.   White pelicans have returned to our shores for the winter.  

 

As you get ready for the busy holiday season, we have a few green tips that have been selected to help make your life easier as well as being good for the beautiful planet we call home. 


 

1.  Cancel those undesired catalogs and junk mail that go straight to the recycling bin without a glance. Visit The Direct Marketing Association's Mail Preference Service  which allows you to control the junk mail you receive. dmachoice.org

2.  Throwing a party?  Try using on line invitations such as Evite! With over 22 million subscribers, Evite is a fun way to customize invitations.  Also, guests can immediately see who's coming, creating a buzz of excitement right up to the event. Once you see how easy and fun it is, you will never go back to licking envelopes.

 
3.  Gift ideas?  A few of this years favorites, available on Sanibel and Captiva, include:

  • Local delicacies such as Black Mangrove honey or Seagrape wine or jelly are a unique gift to friends up north.

 Just In Time For The Holiday

Cake:
2 1/2 cups self-rising flour
1-cup buttermilk
1 1/2 cups vegetable oil
1-teaspoon baking soda
1-teaspoon vanilla extract
1/4 cup red food coloring
1 1/2 cups sugar
1-teaspoon unsweetened cocoa powder
1-teaspoon white vinegar
2-large eggs
 
 
TO MAKE CAKE: Preheat oven to 350 degrees. Mix together all ingredients with an electric mixer. Spray three 9-inch round baking pans with nonstick coating. Pour the batter equally into the three pans and bake for 45 minutes. Test for doneness by inserting a toothpick into center of cake.  Cake is done if toothpick comes out clean.
 
 
Frosting:
1/2 lb. (1 1 /2 sticks) of butter, softened
1 lb. box confectioner's sugar
10 oz. cream cheese softened
1 1/2 cups chopped pecans
 
*Optional: set some chopped pecans aside to garnish the top of cake
 
FOR ICING: Mix cream cheese and butter until smooth. Add sugar and mix thoroughly. Once smooth, add pecans and mix again. Frost in between layers of cake evenly first, then frost sides and top. Lightly tap the frosting with the back of a spoon to create soft peaks. Sprinkle the remaining chopped pecans on top of the cake for a true Bubble Room finished look.
