WE are so very grateful to live, work and play on these precious islands of Sanibel and Captiva. We again want to tell all of you that we are grateful for our relationships with YOU! This month our Guest Columnist section will share a reflection of Thanksgiving regarding the The Islands and Our Surrounding Environment from our very own Island Expert. We have calendars that tell us the date, and maybe even the time of sunset or moonrise. We know that fall is one of the four temperate seasons. The two seasons of the tropics are wet and dry. With Southwest Florida located at the edge of both climates, there is a blurring of those two patterns. Winter starts arguing with summer and eventually the jet stream shifts
In this land of fuzzy edges, wind from the east and south, which are more dominate in the summer, bring warmer air with a bit more humidity. Northern breezes, which enter our world when St. Louis and Chicago are getting pounded with snow and ice, are cooler, crisper air. We don't escape completely from winter if you call 60 degrees freezing cold.
Wildlife shows its cycles too. For much of my life, I thought evergreens were forever green. So when I saw a bald cypress really bald I thought it was dead. Now I know that when the needles fall, it is late autumn in South Florida.
Just when we get ready for our long winter naps, our local birds start celebrating the beginning of life. November means the bald eagles are on their nests. Their gold feet seem more prominent this time of year. Ospreys are reuniting with their mates. Making their crazy dives and swoops to prove they are worthy of mating.
Spoonbills start gathering in numbers before heading off to Florida Bay sometime in December for nesting. Their fall plumage reflects their readiness to mate, with magnificent deep pinks and red. Even the orange of their tail is more visible.
Ibis 'tweens join the adults for feeding along the shoreline and in shallow wetlands, including people's yards. 'Tweens are just that, losing their juvenile brown color and molting into the adult white plumage.
Historically more abundant, there's one kestrel I see on a regular basis on the power lines in front of "Robin's Nest" on Captiva. Every once in a while I can see one perched along Sanibel Captiva Road.
It is no longer 90 degrees. So instead of seeking shade while parking our cars, we don't mind the sun. In November alligators and gopher tortoises will bask, warming a bit before going in search of food. Natives or almost-natives may resort to wearing clothes with sleeves, but the guys still seem to insist on shorts.
I am grateful to live where I still have to dig really deep in my drawer to find socks. I love living where tomatoes grow ripe in November, then in February and again in April. Three season gardens they call them.
Its late fall and I still can't find my shoes. My feet hate being confined. Sandals and bare feet let me feel the warmth of the sand as I look out at the sparkling water of sunrises and sunsets. It is a far cry from chipping ice off my windshield and wondering if the snowplow is going to bury my car.
Thank heavens there's great little spots where it feels tropical at Thanksgiving. Sanibel & Captiva are a place where you don't need a passport - just sandals, short and, shirts with sleeves. Maybe a sweatshirt when northern air dips south, but that's a perfect time to nestle in likes the ospreys and bald eagles.

Thanksgiving is one of the easiest holidays to green up. With the focus on giving thanks rather than gifts, we honor not only our family and friends but Nature's bounty, too.
This months Green Tip for Thanksgiving focuses on the family meal!
Portion Control
Portion control is an important way to stay healthy while still enjoying all your favorite foods. The green aspect of portion control is eliminating waste.
At least 28 billion pounds of edible food is wasted each year - more than 100 pounds per person.
Use Less Stuff use-less-stuff.com created a handy list of approximate per person food and drink portions:
Turkey- 1 pound Stuffing- ¼ pound Sweet potato casserole- ¼ pound Green beans- ¼ pound Cranberry relish- 3 tablespoons Pumpkin pie- 1/8 of a 9 inch pie
Table Scraps Don't have a dog to give the table scraps to? Compost your food waste! Fruits and vegetables and their peels, pits and seeds are all perfect for composting, and a great natural fertilizer.
Leftovers What if, like me, you think Leftovers are the best part of the meal? Remember to share those leftovers with reusable containers. Or better yet, use colored permanent marker to simply decorate a recycled jar. Sunshine Grilled Snapper w/Orange Citrus Crab Sauce Cook & Prep time 1 hour
Ingredients
2 Local Red or Mangrove Snapper Filets (skin off)
2 Florida Oranges
1 Tablespoon extra Virgin Olive Oil
1 Tablespoon each, chopped Parsley, Oregano, Chives
1 Tablespoon Rice Wine Vinegar
1 Tablespoon Corn Starch
3 Cups Fresh Squeezed Florida Orange Juice
1 Cup Fresh Lump Blue Crab, cleaned, no shells
2 Garlic Cloves
Salt & Pepper
Marinate for Snapper, Combine Juice and Zest of one orange Smashed Garlic, Evoo, Herbs, Salt & Pepper Mix and Marinate Snapper for 45 minutes Reserve Marinate for brushing while grilling
Sauce 3 Cups of Orange Juice, reduced by half, mix one Tablespoon Corn Starch with a little water, add to juice, slight heat to thicken, add one Tablespoon Rice Wine Vinegar, Salt & Pepper, cut Orange segments from remaining Orange, add to sauce, and heat, add Crab Meat and reserve warm.
Snapper Heat Grill, clean and brush with oil, Grill Snapper on medium low for 3 minutes a side, frequently basting with reserved Marinate Plating Plate Snapper and serve with seasonal local grilled vegetables, top with Orange Citrus Crab Sauce and pair with a Pinot Grigio or Chardonnay. This is a nice easy to prepare Recipe that keeps Friends and Family entertained around the Grill enjoying the wonderful Florida weather. Chef Cecil Miller says "ENJOY!"
