Welcome to our November edition of E-Paradise.

November .... Our personal favorite month of the year! A month when we begin to say "tis the Season"....Selling Season, Seasonal Residents return and Holiday Season begins.

And of course it is time to celebrate Thanksgiving! WE are so very grateful to live, work and play on these precious islands of Sanibel and Captiva. We also want to tell all of you that we are grateful for our relationships with YOU!

We are truly blessed! So WELCOME BACK if you are returning and HAPPY THANKSGIVING to all!

This month our Guest Columnist section will share a word of Thanksgiving regarding the The Islands and Our Surrounding Enviroment from our very own Island Expert.

A Grateful Heart!

"It is with a grateful heart that I call Captiva home, actually North Captiva. Each work day I climb in my old boat and make my way south down Pine Island Sound and then west to Roosevelt Channel. From McCarthy's Marina I drive my car to work at the Sanibel Captiva Conservation Foundation aka SCCF."






The commute most days is a blessed event. Some mornings, I am the first person out on the water. There are days so calm and still that the smaller mangrove islands appear to hover above the horizon, and other days when I race a thunderstorm home. There are also mornings that I need no coffee to awaken all of my senses. The first wave that slaps the hull and drenches me takes care of any residual drowsiness

There are views of the night sky that surely show an illumined path to heaven as the Milky Way spreads across the sky. Captiva is one of the few places the night sky is not obliterated by urban lights.

White ibis cross my bow, flying from their night roost to the feast that awaits them in the surf of the beach. If there is a sand bar showing a silhouette of just one bird, I know it is one of the local bald eagle. Bait fish swirl in the water, tarpon roll and ospreys swoop. The waters around the islands are teeming with life.

When I see groups of dolphins bobbing in place, I shut down the engine. Puh faa, puh faa. They're taking a nap. Imagine being able to put half your brain to sleep at a time so you can rest. Wow! I'd love to be alert, watchful for predators and rise to the surface to breathe while half my brain is blissfully sleeping. On the brink of the busy winter season I'd love of nap, even if it was half time.

With each trip, I am humbled by the gift of living in this world. Happy Thanksgiving.

Kristie Anders has been education director at SCCF for more than 20 years. SCCF is a not for profit organization dedicated to the preservation of coastal habitat and aquatic resources on Sanibel and Captiva and the surrounding watershed. Celebrating Thanksgiving at a friend or family members house?  Here are a few hostess gift ideas that your host / hostess will really be thankful for - locally inspired and environmentally friendly.





Potted plants.  Cut flowers are beautiful and convenient but a potted plant has long lasting appeal.  My new favorite plant is the Cranberry Hibiscus.  This purple colored leafy plant is Florida native and does well in sandy soil - best of all its edible.   Delicious on the side, as a tea or tossed into your favorite salad.  You can find them at Echo, an organization that helps feed the world's hungry.

Homemade jam or preserves.  If you do not have the time or talent for making your own consider picking up a locally made variety such as Seagrape Jelly, Cocoplum Jam or Mango Chutney.  Include a recipe card, available on-line, for an added special touch.

A book is always a great idea.  There are some great organic cookbooks out there that may inspire and educate your host / hostess. If thats not your thing, the Ding Darling bookstore has J.N. "Ding" Darling's Conservation and Wildlife Cartoons for sale.  Sure to be a fun conversation piece.

This thanksgiving we are truly thankful for this beautiful place we call home.  Have a safe and happy Thanksgiving from Seacoast Cottage Company.

Want A New Twist For Turkey Leftovers?

Captiva Pizza














Turkey Pizza

Courtesy of Captiva Pizza Yogurt & Gifts Emporium


One 10-14 Inch Frozen Pizza Crust or you can use your own Pizza Dough/Crust Recipe if you have one.

2-3 Ounces Turkey Breast (Cooked anyway you like, ours is oven roasted)
1/4 Cup Ricotti Cheese
1/2 Cup Fresh Mozzerella Cheese
1 Tsp. Italian Seasoning
1/4 cup EVOO (Extra Virgin Olive Oil)
5-6 Leaves Chopped Fresh Basil
1 Roasted Red Pepper
1/8 Cup Fresh Green Pepper
 
Spread EVOO & Italian Seasoning on Pizza Crust, edges and all!
Spread Ricotti Cheese Evenly over pizza crust
Sprinkle Fresh Basil
Sprinkle most of Mozzerella Cheese, saving just a bit
Add Turkey
Roasted Red Pepper
Green Peppers
Sprinkle the left over Mozzerella on top, place pizza in oven.
Melt Butter and add roasted garlic to brush on the crust when the pizza comes out of the oven!
 
Bake in Oven at 400 degree oven for 13 minutes or until bottom of crust is browned, and the  cheese is melted
 
Slice, Serve and Eat!
