The original Chuy's restaurant started in 1982 in Austin, Texas. It all began in an old abandoned Texas barbeque join on Barton Springs Road. There was seating for about sixty, a dirt parking lot, a women's restroom the size of a broom closet & a men's room that was, us, outside. Founders Mike Young & John Zapp decided to turn the location into a Mexican food restaurant. They spent all of their money on getting the restaurant opened, and they only had $20.00 left t spend on decor. Fortunately, they didn't let that stop them.
The decor was simple. Mike headed out the door with his $20 & guaranteed John he'd be back with something. As he puts it, "You can't fake cheap." It didn't take long for hin to spot a vendor selling velvet paintings on the side of the road. He bought two, Stevie Wonder & Elvis. Walls were done, the floor was next. "We could never decide on a floor tile cover," says Mike, "so we chose a bunch of colors & laid them out to look like we planned it that way." Soon after, the doors opened & their plan to serve fresh, tasty, affordably priced Mexican food became a reality. The Chuy's menu was created specifically to offer a taste of home, featuring family recipes from South Texas, New Mexico and Mexican border towns. Menu favorites include Burritos As Big As Yo' Face, Stuffed Chile Rellenos and margaritas made with fresh-squeezed lime juice. Our food is a powerful addiction.
We have a saying, "If you've seen one Chuy's, you've seen one Chuy's." Each location has a personality of its own, but you can always expect signature pieces of our fun and eclectic decor - hand carved wooden fish, hubcaps hanging from the ceiling, uneven tile in funky colors, metal palm trees, colorful art, and, of course, the Elvis Shrine. You will feel right at home in any of our locations.
We now have a cult-like following, and we maintain the reputation ads the most fun and friendly spot to eat authentic Mexican food at a great price. We have several locations throughout Texas, and we are currently expanding across the south. We have an aggressive growth plan, and we hope to bring Chuy's to your neighborhood very soon.
