Greetings!

The month of March has been full of activity, friends and weather! If you have had any of the March comes "in like a lion" weather, then you are ready for the exit that has March going "out like a lamb"... I know I am eager for sunshine and fair weather!

The gift of spring is the beautiful color of GREEN. One of the most healing of foods are all the leafy greens that begin to show up FRESH in grocery stores and local markets. From lettuces to kale, parsley and other fresh herbs, these foods benefit your bones, heart, lungs and digestion. If you like to THINK GREEN then take another step and begin to EAT GREEN! Your body will thank you!

What you need to know about FRUITS AND VEGETABLES...

Current USDA recommendations for a health diet includes 9 - 12 half cup servings of fruits and vegetables EVERY DAY... so, how are you doing with "eating your veggies?"  The rewards are worth the effort. Studies show that as much as 80% of heart disease and 90% of diabetes cases are related to unhealthy eating and lifestyle choices. Recommendations from researchers and doctors abound for emphasizing a diet rich with fruits and vegetables to help lower blood pressure and bad cholesterol. Health care in America cannot simply be about insurance benefits, doctors or medicine for real health begins with real food.

Spring Food Focus: Leafy Greens
Parsley
Leafy green vegetables are uncomplicated, flavorful and a powerhouse of nutrition. High in both vitamins and minerals, they are the best source for bone building calcium the body will use. Fresh and abundant in the spring, look for lettuces, spinach, kale, dandelion, arugula, parsley, watercress, escarole, Swiss chard, collard greens, chicory, broccoli rabe and more!

It is easy to use the lettuces and herbs fresh, but get daring and try something new by learning to add fresh greens to stir fry, soups or as a side dish. With minimal preparation by simple washing with water and spin in a salad spinner or pat with paper towels to dry, greens can be added to a meal quickly and conveniently.
Sauce Recipe for Greens

Basil Tahini Sauce

Ingredients:
2 Tbs. Tahini
½ Lemon, juiced
1 Tsp. Balsamic vinegar
1 Tbs. Tamari
1 cup fresh Basil leaves
2 Tbs. water
 
Directions:
Place all ingredients in a blender and blend until smooth.
Sauce is high in calcium and Vitamin K.
When added to steamed greens, it boosts the calcium index.

Spring Cleaning?
The months of March and April are often a time for cleaning up around the house and yard, with plans being discussed for summer. Often referred to as a time of renewal, it is a good time to take the cleaning out of closets and cabinets to a more personal level and give your body a chance at deeply detoxing from winter blues or illnesses.

A fasting cleanse, or detox program, can help increase energy and improve health by eliminating toxins and improving digestion helping the body to more deeply heal itself. It is also a time to connect with your mind, body and spirit by intentionally choosing to modify diet and lifestyle for a few days or more.
