Cheesy Hash Brown Casserole

  • 1 (32 oz) package of frozen hash brown potatoes, thawed
  • 1 pound American cheese, cubed
  • 1 (10 3/4 oz) can condensed cream of celery soup, undiluted
  •  2 C sour cream 3/4 C butter, melted and divided
  • 3 tablespoonns chopped onion
  • 1/4 teaspoon paprika
  • 2 C corn flakes, crushed  

1.  In a large bowl, combine hash browns, cheese, soup, sour cream, 1/2 C butter and onion.  Spread into a greased 13x9x2 inch baking dish.  Sprinkle with paprika

 2.  Combine corn flakes and remaining butter, sprinkle on top of casserole.  Bake, uncovered, at 350 degrees for 50 - 60 minutes or until browned and heated through.    Serves  8 - 10.

10 Tips to Maximize your Gas Mileage

  • 1-Make sure you follow recommended maintenance of vehicle.  A clean air filter is more efficient than a dirty one
  • 2-Keep tires properly inflated.
    A low inflated tire actually requires more energy to rotate.
  • 3-Lose weight.
    Empty the trunk of uneccessary clutter. Less weight = Less fuel needed.
  • 4-Avoid idling.
    While waiting to pick the kids up from school,  find a parking spot and turn the car off. When you leave the car running in place, you're getting 0 mpg!
  • 5-Drive with the windows in the UP positon.  When the windows are down the car loses a lot of it's aerodynamics. This causes drag and therefore requires more fuel.
  • 6-If you are driving a pick-up, drop the tailgate down. Once again, reducing drag increases fuel efficiency.
  • 7-Anticipate stops.
    If you know there is a light/stop sign coming up, slow down earlier, ease out of the gas and slowly depress the brake pedal. This will also save on brake wear.
  • 8-No drag race starts.
    Just slowly ease on the gas, gaining speed as necessary.
  • 9-Maintain your speed.
    Especially on the highway, find a speed that fits the traffic flow and maintain the throttle positon. Never yo-yo on the gas pedal.
  • 10-Drive a Honda Hybrid.

The Girls of Summer Return

Playing soccer in the middle of the summer heat?!  Are you crazy?!  I guess you could say many of us are crazy.  For the second year in a row, WSC players took to the field for a mixed session from mid-July to the end of August.
 
Some teams kept their usual lineups while others mixed it up with players from different teams and, in some cases, different divisions.  The "new" teams gave everyone a chance to meet and play with new people.
 
I personally love playing in this session.  Not only do I enjoy meeting new people but I always learn new things when I play with different people.
 
A BBQ at Uihlein Soccer Park capped off the mixed summer session.  Beverages, brats and food galore awaited hungry players and their families after the last game of the session.  To combat the impending darkness, WSC President Ginny McCullough thoughtfully handed out glow-in-the-dark necklaces.  (Where were those in the last 15 minutes of our last game?)

Two Recovering Knees Later!
 

As most of you may know I have been out since May of this year with a double knee injury. I would like to take this opportunity to thank my team the Cosmos and the club for all of the support, thoughts, prayers, food, and gifts. It brings tears to my eyes to think I am affiliated with such a wonderful, strong, good-willed set of women. For strangers to reach out to me and my family, what a tremendous gift of kindness.

My best friends right now are my walker, wheelchair, and cane. This accident has made me viewed life differently. I was a control freak and now I am dependent on everyone in my life. I hope to be driving again by October so I can regain some of my independence back.  I am lucky to have the ability to work from home; I try to work up to 30 hours a week so I also have time to do my PT.  Without my twin boys who are 12, Eric, family, and good friends I would be in a facility. I am doing water therapy 5-6 times a week and am working on building my quad muscles. My complete recovery time is estimated to be at least 2 years. I am planning to start swimming and walking as my extra curricular activities in place of soccer.
 
There is that famous saying:  "It takes a village to raise a child" well that saying applies to recovering from a major injury too. There are not enough words of how my gratitude is to the people in my life and those of you who have been supportive.

The Eagle Soars

I was playing on the Phoenix team against the Eagles team a couple of weeks ago. Unfortunately, a ball was kicked and it accidently hit Julie in the face. I was truly amazed at her toughness as she refused to leave the field. She shook it off and continued playing. Later in the parking lot, I happened to be parked next to her and we started talking. She is amazing! I needed to share her story with the rest of the WSC. She is truly another amazing woman playing in the WSC! The more I meet WSC women, the more impressed I am. Please meet Julie Kniech Player Profile of the Month.
 
Julie Kniech was born in Detroit, Michigan, the second of five children to Jerry and Patricia Moran -coming up on 45 years of marriage. She has a sister Susan - 43, brother Brian - 38, sister Nancy - 36 (of which she shares the same birth date) and brother Sean who is 26. Julie grew up in Southfield, Michigan and graduated from Kettering University (formerly General Motors Institute) with a degree in Mechanical Engineering, Specialty in Plastic Design.
 
Julie met her husband Ken, currently a Senior Network Administrator for Actuant Corporation while skydiving. "My kickboxing instructor, Tom Burzynski talked a few of us into making a skydive.  He jumps almost every weekend.  I went to Sky Knights in East Troy, took the class, and had to hang out there all day waiting for the rain to clear up.  There were very few other people there (we don't jump in the rain).  Ken was one of them.  We went on our first date a few weeks later. He proposed to me two years later at a dropzone (skydiving place) in New Jersey.  It was a very elaborate set up, where we went through a rehearsal of a skydive with more than 20 people on the ground (we call it a dirt dive).  I only had a couple hundred jumps at the time, and everyone else had over a thousand or two or four, so I was very focused on remembering where I need to go, and flying my spot correctly (I didn't want to look incompetent), that I didn't even notice the large ring box bulging in his jump suit.  We went through the motions of the skydive for about 10 minutes, and at the end, he got down on his knee and proposed.  We have it all on videotape (it never occurred to me either that we typically do not video tape the practice, just the actual jump)" explained Julie.

Julie has been at Tailored Label Products in Menomonee Falls for 5 years as a Customer Service / Technical Support person.  They die cut and print labels for various industries including automotive, appliance, medical, outdoor power equipment and electronics.  Previous to that she worked for 10 years as a Program Manager and Design Engineer for Delphi Automotive, designing body computers and remote keyless entry systems.
 
Julie and Ken have two children - Jonathan is 4 and Allison is 2.   They both have been very good fans this year, sitting on the sidelines by themselves at a few soccer games.  They keep her busy at the zoo, parks, and bike riding when she doesn't have anything else going on.                                         Julie Kniech -Champion Hockey team
 
When asked about hobbies and interests, Julie said," It seems my general habit is to take up a new hobby every three years.  Soccer was new to me last year, and I'm still learning. I used to play softball, basketball and line dance, but not very often any more. I also coached grade school cheerleading, volleyball and basketball for over 12 years.  I helped teach science experiments in the Milwaukee public schools for 5 years. I like to mountain bike, golf, scrapbook, sew, make jewelry, I currently play volleyball in two leagues (down from 3 last year), soccer one night a week, and am hoping to return to hockey after a one year hiatus ( I took that up at age 27). My parents and siblings were always involved in many things growing up; it's no wonder I can't slow down. The one thing that everyone thinks I'm crazy for doing is skydiving.  It's very scary until you get the hang of it, and feel comfortable, then it's very fun and incredibly peaceful at the same time."
 
 When asked what she does as an instructor, Julie explained, "There are a few levels of instructors in skydiving.  Each requires more experience, and more training.  Approaching 500 jumps, I have a Coach rating, which allows me to jump with students after they have a minimum of 8 jumps. I give a student two or three things to accomplish, or practice during their skydive, jump with them, then provide feedback so they know what they are doing well or wrong, and try to give feedback on how to improve their technique. In comparison, my husband Ken has somewhere around 3,000 jumps, and has a Tandem rating - he can attach a student to the front of him in a special harness, and be in control of the jump.  Ken also has an Accelerated Freefall rating.  This allows him to teach first timers through a 5-hour course.  The student will make their first jump wearing their own parachute, but will be held on to and guided by two instructors. 
 
Aside from my instructor rating, I have a Master License (levels of proficiency), which are required before you can think about becoming an instructor. I had to jump at night twice (yes, in the dark) to get that one. I have jumped in Wisconsin, Illinois, Iowa, Florida, New Jersey, North Carolina, Arizona and Montana.  Ken has jumped in a few large formation record attempts, which pools talent from all over the country so we seem to know people wherever we go to jump.  It's like a second family."

Julie started playing soccer in the WSC on the Eagles team last year in 2007. Nikki Schoonover, a captain of the Eagles team, works at the daycare that Julie's kids go to and knew that she was a pretty active person. Nikki asked Julie to join her soccer team. Having never played soccer before, Julie is having a great time playing soccer. "The women are as competitive as the men I play hockey with, yet most seem to have lots of fun playing.  It's nice to hear the laughter among the serious play." says Julie.
 
After all her activities and as a working mother, Julie likes to travel and cook. She enjoys a nice tender steak with a glass of red wine when she can. She loves spending time with her children and husband Ken. Her favorite movie is "Say Anything". Julie's favorite quote by James Dean - "Dream like you'll live forever, Live like you'll die tomorrow." The more I learned about Julie in this interview, the more I found that Julie is realizing her dreams. She grabs all that she can out of life and doesn't let moss grow under her feet!

 caddie playgroundRiver Classic Tournament:  Dubuque, Iowa August 2-3, 2008
 
The WSC Majors team ended their season in style at the River Classic tournament the first weekend in August!  The team held on to the victory against Quad City.  The Majors held the game 2-0 until the final minute in the game when the other team got one past our exhausted and beat-up defense!
 
The tournament started Saturday morning with a draw, 1-1, against the same team we would see in the finals.  It took us a little bit to get going and it was the beginning of a long, hot summer day!  By our second game, at 3pm, we were playing like the team we knew we are and we easily rolled over Platteville, 3-0 and with only 2 subs, we would take it any way we could!

As luck would have it we didn't play again until noon the next day and awoke to the sound of rain Sunday morning.  As dry as the fields had been the previous day, it was a welcoming sound!  Unfortunately by the time we arrived at the fields, it had already dried out and was looking to be another scorcher!  We won our game versus Peoria, 2-0, to propel us to the championship game!
 
We knew that we had only tied this team previously so we didn't look past them ~ but we REALLY wanted the shirts that the championship team would receive!  So, needless to say, with only one sub available for the game, we found the fuel that we needed to send us to the winner's podium, receiving the trophy and proudly wearing our Mr. Soccer Champions t-shirts!
Thanks John for giving up a weekend and coming along to coach us & thanks to all the players that made it for the weekend, it was a lot of fun!

Concern over the success of the US Women's National team surmounted when forward Abby Wambach broke her leg one match before the plane departed for Beijing.  In what ball players call a "friendly" tune up match against Brazil, Wambach broke her tibia and fibula in a collision with her opponent, taking her from the game of soccer for the better part of a year.  Wambach, a leader and top scorer on the team, was seen in large part as the vehicle that could drive the US National team to a possible gold metal match.   With Wambach out, US hopes for Olympic gold were in doubt.

When the women made their 2008 Olympic debut against Norway, many viewers wondered if the car had indeed crashed.  In a disappointing opener, the team seemingly gift wrapped the win for Norway with two big mistakes in the back line, namely a pass back by Kate Markgraf directly to forward Melissa Wiik of Norway, assisting her goal against the United States.  Markgraf lost her start in game two against Japan, where the US won 1-0 on a Carli Lloyd goal.  Things were finally looking up. 
 
Game three was a must win for the National Team as they turned to face New Zealand.  In this game, the US started to shine.  Abandoning the constant long ball approach, the team began to string passes together through the midfield creating scoring opportunities for the offense.  With confidence in the US team now on the rise, the women faced Canada in a win-or-go-home quarter final in Shanghai.  After 120 minutes of play, the US won in this exhilarating match with a goal from Natasha Kai in overtime.  The semi final brought US face-to-face with Japan for the second time in the tournament and they won handily 4-2.  
 In dramatic fashion, the US met Brazil once again in the final to play for the coveted gold medal.  As always, this was a physical, raw and emotionally charged game - one which both teams, each woman on the field and in the wings, wanted desperately to win.

In the end, even without their star forward, the United States won gold, becoming the first women's soccer team to win back-to-back gold medals. In extra time, like so many matches before, National Team midfielder Carli Lloyd scored the only goal to help the team fulfill its summer dreams.  As each member of the US team will contend, it was only together that they were able to achieve their goals.  And with phenomenal saves by Hope Solo, numerous goals from Angela Hucles, and determination form the entire crew, the US Women's National Team won soccer's most prestigious medal  -- Olympic gold!
