Pondering menus for your next event? At first glance, a 3-course meal may seem like the best value but let's think this option through. A seated dinner requires substantial wait staff and rental equipment (tables, chairs, linens and place settings as well as table centerpieces). Heavy hors d'oeuvres, on the other hand, are typically more expensive (cost per piece or per person) but require less wait staff and rental equipment. So, the real question might be "how formal is my event?"
