May is Riesling Month! What better way to celebrate Riesling then by cooking with this delicious wine!
RIESLING POACHED PEARS WITH CARDAMOM CREAM
Pears:
1 bottle HAZLITT semi-dry Riesling
2 cups sugar
4 ripe pears (Bartlett, Bosc, D'Anjou, Fiselle or Seckel)
Cardamom Cream:
1 cup heavy cream
1 tablespoon superfine sugar
1 teaspoon ground cardamom
Directions:
Pour the Riesling into a medium saucepan and whisk in the sugar until it dissolves. Peel the pears, leaving stem intact, if present. Remove bottom stem end with a small melon baller and continue to scoop up into the pear to remove the core. Place the pears in the Riesling mixture and add just enough water to cover the pears. Cook over medium-high until boiling. Reduce heat and poach until pears are just soft (20-25 min). Remove pan from heat and cool fruit completely in poaching liquid, refrigerate fruit and liquid in sealed container until ready to serve. (Fruit will hold for 4-5 days, the longer the fruit is stored in the poaching liquid the fuller the flavor).
Before serving: pour ½ the liquid into skillet and bring to boil over high heat, cook & reduce until liquid gets syrupy. Meanwhile whip cream with sugar and cardamom until cream holds soft peaks. Refrigerate until ready to serve. To serve place a pear in a bowl, drizzle with syrup and a dollop of whipped cream sauce.

Reservation Policy
Last April we implemented and started enforcing our group policy in order to enhance your weekend tasting experience. The goals of the group policy were 1. To be able to spend more time with our fans and case club members that wanted to learn about our products, talk about our wine, etc. with our staff. 2. Limit the number of large groups and 3. Eliminate the lines and over-crowding; that was cited by our customers as a reason they didn't come to visit on weekends. We are excited to announce, that is exactly what the policy allowed us to do!!! Thanks to the positive feedback and gratitude we received from all of you, the policy is here to stay! Below you will find some details on the group policy that will allow us to continue to offer you personalized service, great music, and a more relaxed experience:
- Advanced reservations are required for any group of 8 or more on weekends. Groups may call for reservations Monday-Friday between 9:30 a.m. and 5:00 p.m.
- On weekdays, we request that you make a reservation so we can be prepared for your arrival but it is not required. We love to have the larger groups visit us during the week because we have more time to allow for a great tasting experience.
- We, of course, will continue to offer preferred status and free tastings to our Hazlitt Case Club membership. Case Club Members are still expected to abide by our group policy.

Tiki Tent Opens
 It is finally here...warmer weather! Our tiki tent will be opening May 7 to celebrate the season! There are plenty of picnic tables and wines to go around; so bring a picnic lunch, grab a Red Cat or Bramble Berry slushy, a glass or bottle of wine, or even a small snack at the tiki tent bar, and enjoy the Hazlitt fun outside!

 DELAWARE FANS!!! Hazlitt 1852 Vineyards has extended its distribution network to Delaware. Effective April 1, Hazlitt brands will be represented in the state by Southern Wine and Spirits of Delaware. The state will initially carry Red Cat, White Cat, Cabin Fever and Bramble Berry so head out to your local wine store and ask for your favorite Hazlitt Wine!!

New at Hazlitt
In case you didn't get a chance to visit us this winter, you will be excited to see some new additions! In the back tasting room we have had added a flat screen television for soon to come Red Cat T.V. You will also find a picture collage of what we have been up to at Hazlitt's Red Cat Cellars in Naples.
As you head out into our parking lot, you may see our staff walking back and forth to the house next door. This was the home of Elaine and Jerry Hazlitt, and in honor of the house always being full of love, family, and staff, Leigh has turned the home into an Employee Wellness Center. The Wellness Center includes a gym facility, pool, a break room and it gives the employees a way to stay healthy and serve all of you with a smile! If you head further back into the parking lot you may notice a little construction on our back office building. We have converted an old barrel room into additional office space for our back of the house operations staff.

Red Cat Racing

2011 marks the fifth season of Red Cat and Hazlitt 1852 Vineyards partnering with Watkins Glen International for another exciting year of world-class road course racing. Major event season kicks off June 3rd-5th with Sahlen's Six-Hours at the Glen, an endurance race featuring high tech machines and drivers who push the edges of the sport. Saturday night following the race the Red Cat Summer Stage opens another season of great entertainment. As always the concert is included in your weekend or daily ticket!
In addition to activities at WGI, Red Cat has introduced a limited label for 2011's racing season. Red Cat Racing Special Collector's Edition Series #4 is available now at Hazlitt winery or your favorite New York beverage retailer
