Did you know that March is National Nutrition Month?
 
We all know that a diet full of fresh fruits and vegetables plays an integral role in providing the vitamins and other nutrients we need to stay physically healthy.
 
For the ethnically diverse children and teens receiving services at River Oak - who are challenged by poverty and emotional and behavioral issues - eating healthy is especially important, for several reasons:
  • A well-balanced diet rich in fruits and vegetables is essential to mental and brain health.
  • Eating nutritious foods has been shown to have positive effects on the prevention, progression, and management of mental health problems.
  • The consequences of an unhealthy diet affects minority populations in the United States at a disproportionate rate compared to White Americans.
  • Low-income families often choose less healthy, more convenient food options since healthier foods tend to be more expensive and labor intensive.

Creative Talent Shines During River Oak's Nutrition and Wellness Fair
 
Child's Food Art

Late last year, River Oak held its first annual nutrition fair for our families, to promote nutritional awareness and healthy eating. One of the highlights of the evening was the food craft station, where children (and their parents or caregivers!) were encouraged to play with their food.
 
Children and families had an array of vegetables of all colors, shapes, and sizes to choose from to create their culinary masterpieces. When they were happy with their finished product, the children and families could either take their artwork home or eat their creation. We were pleasantly suprised that most kids chose to eat their artwork. One boy even asked for more broccoli!
