Jill Marcus ImageMy father grew up in a coal-mining town in Jordan, West Virginia.  His father Caroll ran the company store for the mine . . . and the mine owned everything else:  your house, the land, the school and the church.  If you bought a roast, a hammer or a piece of furniture, it was at the company store.  Your rent and every purchase from the company store was taken out of your paycheck.  Some men found themselves having to work in the mines because they owed money to the mines.

There were about thirty families in that town of Jordan and their sense of community was strong.  My father remembers painting the inside of the Church that their town built, he remembers having school plays and musical performances in the small room above the company store and he remembers the women of the community helping out families who were in need.  There was always a casserole being made for a family down the road or his mom and her neighbor Lotus Groseclose getting together and making cookies to sell to help those in need.  The church minister and his wife, Preach and Peg kept their community together by their faith in God and their support of one other when times were tough. Those families of Jordan never lost their community even after the mine closed, the town was leveled and they moved away to find other jobs. They defined themselves by their community.
 
Our support of community has waned of late.  Many of our neighbors are losing jobs, their homes and lives that they have worked so hard to build.  Other musicians, artists, actors and arts organizations too have lost their funding and means of support.  When times are tough in our community, we cannot afford to turn our backs on those who sustain us spiritually and enrich our lives.  We must reach out wherever we can, live artistically and support the arts community where we can.   The Arts and Science Council needs our support now . . . please support them however you can.  Please see Something Classic's promotion through March 11th during the ASC fund drive . . . by entertaining artistically, Something Classic will donate 10% of the proceeds back to the ASC.  We will define ourselves as a community and who we are personally by our commitment to giving even when times are difficult.

Raisin Walnut Filled Cookies  . . . Virginia Sypult and Lotus Groseclose
 
In a blender, mix 1 Cup Shortening, 1 Cup Brown Sugar and 1 Cup White Sugar.  Add 3 Eggs, 5 Cups Flour, 1 teaspoon Baking Powder and 1/8 teaspoon salt.  In a separate bowl, add 1 teaspoon soda, 1 teaspoon vanilla and 1/3 Cup Sour Milk.  (You know this is an old recipe: Sour Milk is 1/3 Cup of Milk and 1 teaspoon of Vinegar mixed together.)  Finally, mix the dough and sour milk mixture together forming a dough and chill.Raisin Cookies
 
Roll out Dough until thin . . . cut into 3 inch circles with a drinking glass.  Put 1 teaspoon of filling in the middle and top with a dough disk.  Crump with a fork around the edges.  Bake for 10-12 minutes in a 350* oven.
 
Filling: Simmer 1 Cup Raisins covered with ¼ Cup water until water is absorbed.  Combine 2 Tablespoons Flour, 2 Tablespoons Sugar and ¼ Cup Water and bring to a boil.  Add 2 Tablespoons of Lemon Juice and pour over Raisins and mix in 1 Cup Chopped Walnuts.
