A buttery crust filled with chunks of fresh cut peaches is a simple, yet delicious treat.

Our first special of the month is a Pi�a Colada Cupcake.

  Made with a coconut cake and coconut buttercream, filled with our pineapple filling and topped with coconut shavings. Contains a small amount of rum. 

Tropical Fruit Torte
Tropical Fruit tart Our fruit torte has a cookie dough crust filled with custard and topped with a variety of tropical fruits.  Great for any summer BBQ.

French bread Makes for outstanding bruschetta.

Greetings!  

            Preparing for this July newsletter, I read some past summer editions. I felt the one reprinted here, hit the mark for our celebration of the birth of our independence and merited another printing. My wife, Carole, said I am just having writer's block. You decide.

 

            Having been a history major, July 4th, Independence Day is my favorite non-religious holiday.  We celebrate a rising tide of self determination culminating in our founding representatives declaring independence from their mother country.  Philosophers of the day viewed this act as the grand experiment; a chance to see if their musings could be put into practice.  The monarchs of Europe hoped that this uprising would turn out to be like an adolescent's rebellion.   

 

            That could very well have been the case, but for the abilities of our founding fathers to build a framework that has endured for over 200 years.  Many countries have imitated our system with varying degrees of success.  I think the American experience is unique.  As we encourage diversity in our communities, we have to recognize this diversity extends to countries as well.  Each country is unique and what works here may not be effective when dropped into a different culture. Sometimes I think our leaders overlook this.

 

            July 4th should be a festive occasion.  Celebrate with family and friends.  I've included a recipe for tortellini salad courtesy of one of our pastry chefs, Erica.  Our bread of the month is a French Baguette, both because it makes good bruschetta and because the French celebrate their own independence from monarchy on Bastille Day, July 14th.

 

            At the end of the day take a few seconds to reflect on what makes this great experiment a success.

Erica's Mom's Summer Tortellini Salad



Ingredients:

1 pkg uncooked refrigerated cheese Tortellini 

1/4 cup sun dried tomatoes 

1/4 cup fresh parsley, chopped 

1/4 cup Greek olives 

1/4 cup prosciutto, diced 

1/4 cup roasted red peppers, sliced  

1/2 cup your favorite Italian Dressing 

 


Preparation
:

1.  Boil Tortellini according to package directions, drain and rinse under cold running water.  Place in bowl and set aside.

2.  Meanwhile, slice the sun dried tomatoes, parsley, olives, prosciutto, and peppers, then place in the tortellini bowl 

3.  Pour dressing and toss all together.  Refrigerate at least 2 hours before serving.
