   June Specials  

 

This months menu features the blueberry.  The first item on the month is a Fresh Blueberry Cake topped with powdered sugar.

Our next item is the new Wholegrain Blueberry Muffin.

We are also now making Pretzels!  We will  be making regular pretzels, pretzel rolls, and the special for the month are Pretzel Sticks.

Our cake of the month is the very popular Brownie Crunch Cake.

Lastly our featured cupcake of the month is the Creamsicle Cupcake. A vanilla cupcake with orange cream cheese filling and icing.

            The other day, caused by the Senior Pops concert, Carole and I only got back to the bakery after it closed. Much to our surprise there were 6 cars parked in front. Carole said, "What is going on?" A couple of the people were getting out of their car with their camera phones pointed at the sky. As we followed that trajectory we saw the most beautiful rainbow I can remember. Such is the weather in June.

 

           June is also the month when we get fresh blueberries. I remember as a youth we couldn't wait for a shopping trip to Riverhead. Such a trip meant passing the old lady's farm stand in Calverton and getting some just picked blueberries. If she wasn't busy and her mood just right, she would invite us in the back to her bushes to pick our own. I can still feel the bright sun on my shoulders, but not as hot as in July, and the blueberries almost warm to the touch. The plump ones did not make it to the basket, but burst into your mouth, the warm juice running through your teeth.

 

            This memory inspires the Sweet Treat Specials for the month of June. We will have a fresh blueberry cake and a whole wheat blueberry muffin. My first bite reminded me of those Junes long past.

 

            June is the month of Graduation celebrations. Many of our young people will be leaving Huntington in the fall for the next chapter in their lives. Congratulations to all of them. Please remember where you came from. It will be interesting for you to compare the place you are going to our town. I think Huntington will stack up very nicely.

Fresh Strawberry Salad 


June is the month local fresh strawberries begin to appear.  This salad takes full advantage of their sweetness.  To make the dressing I used Reinwalds Bakery's own Creamy Vidalia Onion dressing. I take a 1/2 cup of the dressing and add a 1/4 cup of fat free Greek yogurt and 1/4 cup mayonnaise.  Zest one lemon for the greens and use the juice of the lemon in the dressing.  Be sure to zest the lemon before you squeeze the juice out.  Add 1/2 tablespoon sugar, grind some fresh pepper and mix with a whisk.  Thin down to pouring consistency with a little milk.

For the salad I use a head of romaine torn in pieces and about 8 oz of spring mix.  Slice 1/2 red onion and 1/2 yellow bell pepper.  Mix together then add 1 1/2- 2 cups strawberries cut in half.  Sprinkle the lemon zest on top of this.  To make it extra special I carmalize some butter and sugar with 3/4 cup organic pecans, then toast them at 360° for about 12 min.  You will be able to smell when they are done.  Don't touch - the sugar will be very hot, let them cool on aluminum foil.  Sprinkle the pecans on top what you want and wrap the rest in the foil for snacks.

Ingredients:
Dressing:
1/2 cup creamy vidalia onion dressing
1/4 cup fat free Greek yogurt
1/4 cup mayonnaise
1 lemon (juice)
1/2 tbs sugar
pepper
milk

Salad:
1 head romaine lettuce
8oz spring mix
1/2 red onion
1/2 yellow bell pepper
1 1/2- 2 cups strawberries
3/4 cup organic pecans
1 lemon (zest)
