This months menu consists of a few new items as well as a item from Reinwald's past.
Introducing our Individual Panna Cotta Dessert.
Italian for "cooked cream" it is a delightfully refreshing dessert made with real vanilla bean. Served with fresh fruit and chocolate decorations.

Raspberry Crumb Rafts. A Blast from the Past, this month we will be making our famous crumb rafts with a raspberry jam filling. This used to be a top item but lost popularity over the years. Enough time has passed and enough of you have asked for us to bring
them back. Enjoy!
Our bread of the month is our Six Grain Bread.
A high fiber bread made with barley, oats, millet, corn, rye, and wheat.
Finally our cupcake of the month is going to be a Carnation Cupcake.
A Vanilla or chocolate cupcake with a raspberry filling and topped with a carnation.

Greetings!
After being admitted to the High School of my choice, I had an admitted student interview with one of the religious order teachers. Several of the questions probed my home and family. This led to some discussions of the role of mother and father. Mom, as is the case in many families, was the compass of good social behavior and manners. She was the glue for the sibling bonds. The Brother smiled. To this day the six siblings get along as do our children, the fourteen cousins! What a nice legacy to celebrate this Mother's Day.
Several years ago I wrote an article for the Baker's Association newsletter on customer service. I described an incident at a drug store cashier line. The cashier was very disinterested in what she was doing. I resolved to not speak unless spoken to. (No small feat as anyone who knows me can attest) The entire transaction took place without a word spoken. My mother would never allow such behavior at our family bakery and never in our family interactions.
These two incidents came to mind because of what happened in the supermarket the other day. The woman in front of me on the line to checkout was on her cell phone. The entire transaction including the swipe of the credit card was made during her phone conversation. No eye contact or acknowledgment of the cashier was made. At my turn, I apologized to the young lady and remarked how rude it was of that customer to treat her like that. She said, "That's okay, it happens all the time." How sad. It doesn't matter which side of the counter you are on, bad behavior is bad behavior. I sometimes lament the invention of the cell phone. Then I think, Thank You Mom, we certainly could use more moms like you today.

Princess Torte

| On a trip to Minneapolis I visited Wuollet Bakery. They serve a largely Scandinavian clientele and their number one selling cake is the Princess Torte. It is made with a light European sponge cake filled with raspberry jam and diplomat cream. It is then enrobed in pure dairy fresh cream and encased with a thin layer of marzipan. Finally it is adorned with the traditional pink rose.

Cross Cakes

With graduations, communions, and confirmations there are so many reasons to celebrate this month! Make your religious celebration extra special by ordering your cake in the shape of a cross. Comes in 2 sizes. A 1/2 sheet which feeds about 25-30 and a Full Sheet cake which feeds about 60-65 people. |

Mac and Cheese
This classic macaroni and cheese is perfect for Dad and kids to make together in the kitchen. It's easy, uses real cheese, and tastes much better than the packaged stuff. This is out of a book Carole got at our engagement, "The Good Housekeeping Illustrated Cookbook."
Ingredients:
2 TBL Butter 1/2 Onion 1 1/2 TBL Flour 1 1/2 Cup Milk 2 Cups Cheddar 8 oz Elbow Pasta Breadcrumbs salt, paprika, mustard powder
Chop 1/2 and onion and cook it in the butter. Add 1 1/2 TBL flour, salt, paprika, mustard powder to make a rue.
Add 1 1/2 cup milk and cook till thickened.
Remove from fire and stir in cheddar.
Pour over pre-cooked elbows.
Top with breadcrumbs sauteed in Butter
Bake for 15-20 mins at 350°
