Greetings!

I have heard everyone say that February has flown by; it is such a short month.  C'mon, with leap year it is only one day short.  Perhaps it is because last year we had a winter that never ended.  This year it is turning out to be the winter that never was.

As we head into March, I see people looking forward to St. Patrick's Day, St. Joseph's Day, the parade in Huntington, and the Easter Holiday.  People are preparing for the change of season and more importantly a change in attitude.  I see people more positive and hopeful.  Very often attitude becomes reality and thus I am hopeful too.

The parade in Huntington this year is on March 11th.  Let's hope for nice weather.  Since the parade goes right past the Bakery I haven't missed one in 23 years.  I remember watching my boys marching with one organization or the other.  Now a days I get to see many a familiar face and many in local organizations that the bakery counts as friends.

Come in during the parade and mention this e-mail to receive one free coffee to warm you up.  You may want to forgo the free coffee though and purchase our killer homemade hot chocolate.  It has become a Reinwald's Bakery tradition to offer our special recipe hot chocolate on the day of the parade.  This hot chocolate uses 70% dark chocolate and includes our fresh heavy cream.  This is the heavy cream we use for our whipped cream.  It is different from what you see in the supermarket because it contains more butter fat for that rich mouth feel.  That is what makes our Strawberry Shortcake so good.  My son Thomas is a hot chocolate aficionado and says this is the best ever.

It is listed below, but worth mentioning here.  On Sunday March 18th, there will be an inter-generational concert at Huntington Hugh School.  The Senior Pops Orchestra of Long Island joins with the Huntington High School Orchestra for an afternoon of light classics and popular show tunes.  Mrs. Reinwald plays viola for the Senior Pops and one sales person, Lauren, plays the same for Huntington High School.  It will be special to see them playing side by side.  Don't miss it!

Hope to see you at the parade,

Corned Beef and Cabbage

This month's recipe is simple, but fitting for the season and a perfect match with our Rye bread which just happens to be on special this month.  I like to get my corned beef from R+S Meats.  It always seems to be more tender.

1 piece corned beef

1 Teaspoon pickling spice

1 Bay leaf

1 small head of cabbage

1 Potato per person

Put Corned Beef in large pot and just cover meat with water.  You really don't want to have too much water over the level of the meat.  To properly braise you need room for the steam in the pot.

Add the pickling spice and bay leaf.

Simmer - not boil - for approx. 3 hours for 3-1/2 to 4-1/2 lb. piece of meat.

With a half hour left cut cabbage into wedges and add to pot.

I used to add the potatoes to the pot also, but now I prefer to cook them on the side.

If you cook this the day before and cool the beef you can slice it nice and thin.  Perfect for sandwiches, on rye bread of course.

St. Patrick's Day Fun Facts

New York City's first recorded St. Patrick's Day Parade was held in 1762 and today is the largest St. Patrick's Day Parade in the world, larger than the one in Dublin.

The first Huntington St. Patrick's parade was held in 1935 and was the first such parade on Long Island.

Corned beef got its name from the corn-sized crystals of salt used to brine the beef brisket.  This was before the time of the refrigerator.
