This months menu consists of some traditional German items with our Apple Strudel and Black Forest Cake. The Black Forest cake is made with dark sweet cherries from Washington and fresh whipped cream layered in between chocolate cake.

Our bread this month will be a Cinnamon Raisin Oatmeal Bread. Perfect for toast.

 

blueberry mousseFresh Blueberries are in!  Try them with our Individual Blueberry Mousse.  Vanilla Cake with blueberry mousse topped with fresh blueberries and whipped cream.  

Lastly our featured cupcake of the month is Reinwald's Key Lime Cupcake. A vanilla cupcake with key lime cream filling and icing.

The last two weeks Huntington had a lot of rain which was followed by some very warm weather.  It has made me think of the Rodgers-Hammerstein song "June is Bustin' Out All Over."  That is what happened; Boom; the trees are full, the perennials are in full bloom and even the recent plantings are in mid-season form.  Carole and I have been able to eat dinner outside several times already.  Al fresco dinners are one of the simple pleasures we enjoy and try to take advantage of whenever we can.  The other day I made a lettuce strawberry salad that got rave reviews.  Look for the recipe below.  The bread we served was just a simple baguette, but it was perfect.

            June is a significant month in the calendar.  It marks the end of the school year and for many of our students; the end of their schooling in Huntington.  Congratulations to all of the graduates and good luck in your future.  The other day a mother was ordering a graduation cake for her son and I was talking with her.  She told me we made his christening, communion, many birthday cakes and now his graduation cake.  My first thought was boy, am I getting old, but also how fortunate I am to be a part of her families memories.

            Father's Day is also celebrated this month.  As a dad to three boys, I can tell you that Dad's don't need presents.  A call or better yet a hug in person is all we need.  I remember a void on Father's Day the first year after my dad was gone.  A simple hug is an amazing thing.

            Hopefully June will be marked by pleasant weather, so we can all celebrate with outdoor parties and Barbeques.  Please remember the warm weather when ordering your special cakes.  We use only fresh heavy cream in our whipped cream and some fillings like chocolate mousse may be inappropriate unless you have the refrigerator room.

Rolled Fondant Cakes

Rolled Fondant Cakes are in!  The fondant is rolled out like a pie crust and used to cover the cake. This gives the cakes a crisp, smooth appearance.

Many special pieces are custom hand sculpted.In order to be placed on the decorator's schedule, we ask for at least 2 weeks notice for your order.

Fresh Strawberry Salad 


June is the month local fresh strawberries begin to appear.  This salad takes full advantage of their sweetness.  To make the dressing I used Reinwalds Bakery's own Creamy Vidalia Onion dressing. I take a 1/2 cup of the dressing and add a 1/4 cup of fat free Greek yogurt and 1/4 cup mayonnaise.  Zest one lemon for the greens and use the juice of the lemon in the dressing.  Be sure to zest the lemon before you squeeze the juice out.  Add 1/2 tablespoon sugar, grind some fresh pepper and mix with a whisk.  Thin down to pouring consistency with a little milk.

For the salad I use a head of romaine torn in pieces and about 8 oz of spring mix.  Slice 1/2 red onion and 1/2 yellow bell pepper.  Mix together then add 1 1/2- 2 cups strawberries cut in half.  Sprinkle the lemon zest on top of this.  To make it extra special I carmalize some butter and sugar with 3/4 cup organic pecans, then toast them at 360° for about 12 min.  You will be able to smell when they are done.  Don't touch - the sugar will be very hot, let them cool on aluminum foil.  Sprinkle the pecans on top what you want and wrap the rest in the foil for snacks.

Ingredients:
Dressing:
1/2 cup creamy vidalia onion dressing
1/4 cup fat free Greek yogurt
1/4 cup mayonnaise
1 lemon (juice)
1/2 tbs sugar
pepper
milk

Salad:
1 head romaine lettuce
8oz spring mix
1/2 red onion
1/2 yellow bell pepper
1 1/2- 2 cups strawberries
3/4 cup organic pecans
1 lemon (zest)

June 4 & 5 - 44th Annual Art in the Park

Fine Art & Craft Fair 10am - 5pm at Heckscher Park. Fine Arts and Crafts will be on display and for sale at this juried show. Live music and demonstrations, food and drink. Free admission.

June 5 - Spring Nature Hike

Hike at Caumsett State Park.  Pass through fields, forest, salt marsh and shoreline and learn about the wildlife, vegetation and geology of the park, hosted by the Huntington-Oyster Bay Audubon Society.
