Greetings!

This year the first week of May is culminated with our celebration of Mother's Day. It seems every year I see another example of the special bond that only exists between a mother and child. This past weekend Carole and I were in Ann Arbor, Michigan for the MBA graduation of our son Gregory. During the entire decision process of going to school, where to go and the whole interview process, father and son consulted. Mom almost felt left out. At graduation father and son talked about the job & financial plans and the logistics of the future. Mom's view was very different.

While we are both very proud and him, Carole's focus is her child; his well being, the excitement of the day, the friendships he formed. She realized the talk of planning and job interviews were really inconsequential. Mom wants to know the essence of her child. Is he happy? Who will be his soul mate? What will happen to her child if a tsunami hits the west coast? She spent a very special weekend being alongside her child and enjoyed being able to touch him and hug him; almost as if he were in the crib. It leaves me in a state of wonder. To all, remember Mom; she never forgets you.

Baking for Japan: Results

Last month we asked for your support of the Red Cross relief effort in Japan. Many of our customers made special donations through the bakery and many went to the Red Cross website to donate directly. Thank you everybody!

As a result of the efforts by all in April; Reinwald's Bakery is sending the Red Cross a check for $2,800. While this was a good cause we hope you all enjoyed the baked goods that made this all possible.

Open Faced Omelette (Fritata)

While visiting Ann Arbor we went out for a special breakfast at a restaraunt called Cafe Zola and was very impressed by the food. One particular dish was exceptional and I thought it would make a great recipe for Mother's Day breakfast. Here is my interpretation of the dish. This recipe is designed for two people. If you are serving more I recommend making separate omelets. You can keep them in a warm oven until serving.

Ingredients:

1/4 vidalia onion - thinly sliced
1/4 cup mushrooms - sliced
scallions or green onions
4 eggs - beaten
tsp butter
tsp olive oil
salt
pepper

In a medium sized skillet over medium heat add butter and oil. Saute your onions until the start to become caramelized. Add mushrooms and cook for about another minute. Add scallions, salt & pepper and cook for another minute, constantly stirring. Add your eggs and reduce heat to low. Cover skillet and cook for about 2 minutes. When eggs are able to move as one unit it is time to flip. Using a spatula slide omelette to a plate. Using a dishcloth or pot holder carefully hold the skillet over the plate and quickly flip it back into the pan. Return to heat and cook for another 2 minutes or so. Slide the omelette onto a clean plate and enjoy! Don't forget about a fresh baked croissant or tea biscuit from the bakery.
