Greetings!

I apologize for being a bit late on this month's letter. Last week I was asked to make a presentation at the International Bakery Industry Exposition held in Las Vegas. I must have done well because the IBA held in Munich in 2012 asked me to speak at their show.

Yes, you read right, Las Vegas. Preparation, the show and after the show meetings kept me there a whole week. Las Vegas is in Nevada, home of Senate leader Harry Reid's seat which is being hotly contested by Sharron Angle. It was the last week of September and the television airwaves were chock full of political ads that shared an abundance of invective. I couldn't help but think if I based a voting decision on these ads I wouldn't be able to vote at all.

They basically said that each party is the lesser of two evils. What is our country coming to? When I want to sell a product, I stress the positive attributes and the simple pleasure it will bring. I don't bash my competition. To tell the truth some of my competition makes a good product. If anything that is a positive because it pushes me to get better.

Not to harp on the election but it really upset me. I vowed to come home and not listen to any political ads. I know the media doesn't like to hear this because these ads account for a substantial part of their revenue. Much better would be to seek out your candidates and listen to their words coming from their mouths. This can be done in person, on the radio or television or a search on your computer (just make sure you are using credible websites).

Please do not let a paid ad dictate your vote. Spend a bit of time and make an informed decision based on your values. I vaguely remember a quote from William Jennings Bryan, "The greatest power a people have is the power of the ballot box. A government fears nothing more."

Please vote on November 2. Remember no matter which way you vote,Reinwald's Bakery will be serving up delicious goodies. Check out this month's recipe.  My brother brought me some fresh brussels sprouts from the North Fork. Carole doesn't eat many vegetables but she loved these. Try them with a pork tenderloin and a slice of our Honey Oatmeal Raisin Bread (this month's special) and a glass of chardonnay.

Sincerely,
Rich Reinwald

Roasted Brussels Sprouts with
Wild Mushrooms & Cream

This is a recipe that we found in the latest issue of Fine Cooking Magazine that was so good we had to share it with you. This rich side dish  puts traditional boiled brussels sprouts to shame. Give it a try with a pork tenderloin, a slice of our Honey Oatmeal Raisin Bread and a glass of chardonnay.

1.5 lbs brussels sprouts (trimmed and halved)
5 tbs. olive oil
kosher salt
3 tbs. unsalted butter
3/4 lbs wild mushrooms (halved)
1 larged shallot (thinly sliced)
1/4 dry white wine
1 cup heavy cream
fresh ground black pepper

Preheat oven to 450. Place brussel sprouts in a rimmed baking pan and drizzle with 3 tbs oil and toss to coat making sure they are in an even layer. Seaon with salt and roast until tender (about 25 minutes). Remove from oven and set aside.

In a large hot skillet add 1 tbs olive oil and 2 tbs butter. Saute mushrooms over high heat for about 6 minutes, stiring occasionally until golden brown. Season to taste with salt and pepper and transfer to a plate.

In the same skillet over medium-high heat add the remaining 1 tbs oil and 1 tbs of butter. Saute shallots for about 3 minutes stirring occasionally. Add wine and reduce by half. Add mushrooms, brussel sprouts and cream . Stir in salt and pepper and continue to cook for 3 to 4 minutes until cream thickens and coats the vegetables.
