Greetings!

I hope everyone enjoyed the Labor Day weekend. For many of us back to school is the theme of the week. Some of us are happy for back to school and of course some are sad. At Reinwald's we have both feelings. Some of our part time employees are back at school. We miss their youthful enthusiasm, but hope for their success and personal growth. I get a sense of a new era of personal responsibility in our young people, a concept I embrace. We look forward to the Thanksgiving holidays when we will see many of our students again.

At the bakery, back to school marks the end of the fresh peach & blueberry cakes, but the beginning of the fresh apple crop. We look forward to baking some new apple based recipes. Back to school also reminds me of my own lunch box days when we opened our box to find what treat was tucked away in the corner. My favorite was always a jelly doughnut or linzer tart but cupcakes are the order of the day. Big Time!

At Reinwald's we have a wide variety of extravagantly decorated cupcakes. Our Sunflower and Red Velvet are by far the most popular, but I really like the Strawberry Cream. This cupcake has a strawberry-marscopone filling and topped with a fresh slice of strawberry. For the next three weeks Reinwald's Bakery will be donating 50 cents from each cupcake to Cupcakes for a Cause. This benefits children affected by cancer.

Cupcakes are fun, cupcakes make you feel good and now cupcakes can help a good cause. See below for more information. We hope to see all of you to join us in what we call "Operation Cupcake".

What is the Cause?

CancerCare was founded in 1944 in New York City with the mission of helping advanced cancer patients. The organization realizes that children and teens affected by cancer have special needs. They formed a specialized group called CancerCare for Kids which gives support to families with children affected by cancer.

CancerCare offers free counseling and support as well as educational programs and advice to families. They offer counseling through many different avenues including face to face support, telephone and internet counseling as well as group workshops.

The organization is very active on Long Island with there local headquarters being in Woodbury. There website has grown to be one of the leading resources for cancer information with over 1 million unique visitors last year.

All about cupcakes

There are two different explanations of how cupcakes got their name. The first story is set in a time before cupcake tins. Someone wanted an individual size cake that they didn't have to cut to serve. What was the solution? Bake the cake in teacups. But what should we call them? "I know, how about cupcakes!"

Another explanation on how these beloved treats came to bear the name cupcakes is in the process that they were originally made. Whoever the first baker to make the cupcake was decided to measure the ingredients in volume instead of weight. 1 cup of flour, 1 cup of sugar, etc. Since the ingredients were measured in cups the name stuck. This is also the way pound cake got its name.

strawberry ccSince then cupcakes have been enjoyed by all. Most of the cupcake eating goes on right here in the United States, but Canada and Great Britain do their fair share. Did you know in Great Britain they call cupcakes fairy cakes? Some think its because a cupcake is big enough to feed a whole party of fairies. We think it has something to do with the fun whimsical nature of the cupcake!

Whatever you want to call them, one thing is for sure these individual desserts are delicious!

Fun, kid friendly recipe the whole family will enjoy!

Veggie and Cheese Quesadilla

This is a great recipe that will make it fun for the kids to eat their vegetables, it is also quick and easy so the kids can get involved.


Ingredients:

8 flour tortillas
butter
Olive Oil
Salt and pepper
1 Clove Garlic (minced)
1 small onion (chopped)
1 Zucchini
1 red bell pepper
1 green bell pepper
2 cups of shredded cheddar or Mexican blend cheese

Instructions:

  1. Preheat oven to 350 degrees.
  2. butter one side of each tortilla.
  3. chop vegetables into small bite size pieces.
  4. Saute onions and garlic in olive oil, add other vegetables and saute until tender. Add salt and pepper to taste.
  5. Lay half of the tortillas butter side down on a baking sheet.
  6. Spread some cheese, then vegetable blend, more cheese and top with tortilla (butter side up)
  7. Bake for 5-10 minutes or until the tortilla starts to turn golden brown.

*Like any of our recipes feel free to make this one your own. Try a different blend of vegetables or add chicken or ground beef. If you like things a little spicy, try adding some ground cayenne pepper.
