Tribute to Mom

Greetings!
 
Listening to Mother's Day ads on the radio it was very unsettling to hear things like, "Treat Mom like a queen on Mother's Day" or "Stay out of trouble by buying Mom such and such." When we make a cake we visualize a family enjoying each other's company in Mom's presence. My nephew, who works on these E-letters with me, asked how do we convey that message. I replied, "Bill, I want you to write a tribute to your mom and what you feel Mother's Day is about."
 
His letter follows. I know it is a bit long but please read it all the way through. We have eliminated our other normal selections so as not to burden you. Where would I be without her?
Everyone says on Mother's Day you should treat your Mom like a queen. Spoil her; make sure she doesn't lift a finger for this one special day. However, your mother is just as special the other 364 days of the year. Mother's Day is a day of recognition, but take some time each day to recognize the wonderful things that your mother has done for you. Even when she gets on your nerves you always take a step back from the situation and say, "where would I be without her?"

whiteheartWhen you were a kid, naturally she cared for you. She made sure you had everything you needed, and tried to give you everything you wanted. From the turkey sandwich with the crust cut off packed for lunch, to the Ninja Turtles lunch box, that she said was too expensive in the store, but was so pridefully carried on the way to the bus on the first day of school. It seemed like everyday Mom's job was making you happy.

As you got older, you really tried Mom's patience. Fighting with your brother and sister to no end. Feeding your vegetables to the dog, who you "forgot" to walk after school.  Faking sick on the day after you got a brand new video game, even though she had to work that day. But still she signed the permission slip and wrote the check for that really cool, optional field trip.

You grew older, but in many ways not wiser and still mom dealt with you. $30 parking tickets but your bank account balance was only $20. Calling an hour after your curfew to tell her that you might be a little late. But still, she helped out with the car insurance because she knew you worked so hard to save to buy that used car.


Older still and the family is growing apart. Your away at school, your siblings have moved out on their own and it seems like you see each other less and less. But the one thing that keeps you together is Mom. When she cooks all day on Sunday because her kids are coming for dinner, you are reminded of how you felt on the bus stop. Like her job is making you happy, however you realize now that she does all of these things because seeing you happy makes her happy and that is the special relationship between a mother and her child.

whiteheartSo this Mother's Day, honor your Mom. Do something nice for her. Make her day spec ial. Just remember that she is and was your mother everyday of your life. And everyday of your life she loves you. So take some time each day to make sure she knows you feel the same way about her. Ask yourself everyday, "Where would I be without her?" and I am positive that you will find a reason to say, "Thank You Mom!"
 
A special Mother's Day Dinner 
Chicken Cordon Bleu with Alfredo Noodles & Asparagus
 
To enjoy time with Mom I suggest getting Cordon Bleu prepared. I always get mine from R & S Meats on Wall St in Southdown. Their phone number is (631) 351-1651. Just like the Bakery everything is always fresh and Anthony Gary and the rest of the staff are very helpful. For a side dish try our family recipe for Alfredo Noodles and fresh asparagus.
 
Easy Alfredo Sauce
 
1/2 cup butter
1 1/2 cups Half & Half
1 1/2 cup grated parmesan cheese
 
Melt the butter and add Half & Half. Heat until just short of boiling, stir in the parmesan. Add a touch of fresh ground pepper and if you have nutmeg in the spice closet, stir a tiny dash in. Pour over your favorite noodles to serve.
 
Fresh Asparagus
 
1 bundle of Asparagus
1 can of chicken broth
1 Tbs white wine or balsamic vinegar
 
Fresh Asparagus is a nice spring time vegetable that cooks in only 6 to 8 minutes. In a large saute or frying pan (big enough so the asparagus can lay flat), bring the chicken broth to a light boil. Carefully lay in the asparagus. Add in the white wine/balsamic vinegar and pepper. When tender (6-8 minutes), drain and sprinkle on a little parmesan cheese.
 
Arrange the 3 items on the plate. Perhaps some fresh parsely with a small tomato cut saw tooth style will make a pretty plate for Mom's special dinner.
