CHICKEN CHIMICHANGAS  
4 chicken breasts, boned and cut into strips
1 c. picante sauce or salsa
1/2 c. green onion, chopped
1 tsp. oregano
1 tsp. salt
7 or 8 inch flour tortillas
Shredded Cheddar cheese
 
Combine chicken and next 4 ingredients in skillet and simmer 5-10 minutes. Spray 9 x 13 inch pan with Pam. Spoon mixture in center of tortilla; top with cheese. Fold sides over filling. Place, seam side down, in pan. Bake at 425 degrees for about 13 minutes.
 
Top with additional picante sauce. Makes 7-8.

A twist to the recipe is to brush the top of the chimi with olive oil and bake.  It makes a really nice crispy crust.  I wait until just about done and then sprinkle cheese on top and melt a bit before I pull them out. 
I place them on a bed of shredded lettuce and spoon on sour cream and picante or salsa.

In this article is tells us to use rags instead of paper towels to clean up messes. I have the Sham WOW's.  They are super great! I use them all the time for quick clean up of spills, dishes, cleaning and yes it does work on those nasty spills on the carpet, they are super absorbent!  I wash them and good as new.  They come with a 10 year warranty and as tough as they are I believe 10 years is right on track.  Jenn

The Extra Mile:
My father was hospitalized this week at Aspirus Wausau Hospital
and in the testing process it was determined that he was to have 
a colonoscopy and endoscopy. The Gastroenterologist on call was
contacted in regards to consulting with my father. We were informed
that his PA-(Physician Assistant) would see my father.  I was so impressed
when my dad told me Dr. Chris Young came to his room himself in his
surgical scrubs to talk with him. My father said his procedure was so smooth
he thought he was only in the room for 5 minutes and it was done. The assistants
and professionals that helped him were totally on the ball and very very kind!
I had the opportunity to work with Dr. Young many years ago and have
to say he is the best of the best!
My father is on the mend and some health issues were found that we
never would have known about if he was not scoped by Dr. Young. 
 
Thank you Dr. Young for making a difference in my father's life!

GI facility in the area!  I highly recommend them for GI healthcare!
