march into spring
Greetings!
    
     March is my favorite time of year to go away. I don't love the cold weather and by the middle of March I begin to feel very sun deprived. I just can't wait for the warm weather to return. Two weeks ago, I traveled to Playa del Carmen, Mexico, with some family. (If you have never been there, I highly recommend it!) We enjoyed the freshest of foods, wonderful fruits and juices and even an amazing lunch cooked for us in an authentic Mayan village as part of a sustainable tourist expedition (see link on right). And, of course, I got a healthy dose of sun!
    Upon returning from my trip, I am feeling relaxed and rejuvenated (as vacations tend to do) right in time for spring.  When we look outside now adays, we can see the Earth starting to come back to life: birds are chirping in the morning, trees are starting to bud, daylight is lasting longer and of course, the temperature is slowly beginning to rise.
    During this time of year, we, too, begin to spring back to life. We have the desire to move around more, to be outside, to breathe fresh air. I encourage you to follow your intuition and move! Rejuvenate things that were put away this past winter -- perhaps a creative project was sidelined and can be restarted or maybe you can simply let go of some out-of-season (get it ?!?) clothes you no longer need.
  Spring time is full of light, bouncing energy. By eating foods that are in season this time of year, you are guaranteed to enjoy some of that very same energy. Look for more information on spring greens in my April newsletter. In the meantime, embrace the change of season and look forward to what that it will bring -- increased sunshine, warmer weather, rejuvenating energy and a whole new crop of foods. So, eat it up!

Springtime Spaghetti Squash

Serves: 6

2 spaghetti squash (approx 2.5 lb each)
1/4 teaspoon salt
2 tablespoons butter
1 large zucchini, julienned
2 teaspoons garlic, minced
3/4 cup heavy cream
3/4 cup grated Parmesan cheese
1 tablespoon fresh dill, chopped
 
Preheat oven to 350°F. Cut each squash in half lengthwise; discard seeds. Place squash halves, cut sides down, on a baking sheet lined with aluminum foil and coated with cooking spray. Bake at 350°F for 1 hour or until tender. Cool slightly. Scrape inside of squash with a fork to remove spaghettilike strands. Place in a large bowl. Sprinkle with salt; toss gently to combine.
 
Melt the butter in a skillet over medium heat, and sauté the zucchini and garlic until tender. Stir in the heavy cream, Parmesan cheese, and dill. Cook and stir until thickened. Mix with the cooked spaghetti squash to serve.
