ripe for the picking
 
Greetings!
     As the heat and humidity continue through August, make sure to take advantage of summer's delicious offerings: sweet fruits and vegetables. Watermelon, corn and tomatoes have always been summer staples; basil and cilantro add great taste to any meal; and peppers and eggplants are great on the grill!
   Experiment with recipes - try making a homemade salsa now, as opposed to in the winter.  Because ingredients are in season, even if you destroy the recipe, you're bound to have a tasty treat!
Hang in there for the dog days - fall will be upon us before we know it. And with it will come a whole other season of food. Enjoy!

portabello & crab bruschetta
 
Ingredients:
Portabello Mushrooms
Vine-Ripened Tomatoes
Jumbo Lump Crabmeat
Red Onion
Garlic
Fresh Basil
Olive Oil
Balsamic Vinagriette
 
   Dice mushrooms and tomatoes. Drizzle with olive oil, enough to evenly coat, and set aside.  Finely chop onions, fresh garlic and basil. Pick through crab meat for any loose shells. Mix all ingredients together. Drizzle with balsamic vinagriette, to taste. Refrigerate  for up to one day to allow full flavors to emerge.
   This recipe is great for any course. As an appetizer, serve over garlic toast or with crackers. For a salad, serve by self or add chopped asparagus. As an entree, saute and serve over linguine. De-lish!

Susan Rubin sounds passionate and angry as she describes the junk-food free-for-alls she has seen at schools across the nation.

Students are often surrounded by foods that "are loaded with so many artificial ingredients and additives that you need a Ph.D. in biochemistry to figure out what's in them," says Rubin, a mother from Chappaqua, N.Y., with three school-age daughters.

"Real food doesn't come from a science lab. It grows in the ground, flies in the air, swims in the sea and walks on the ground," says Rubin, 47, one of the stars of Two Angry Moms, a new documentary film about a parental war against the sale of highly processed, sugary foods in U.S. schools.
