     It is with great excitement that I introduce my newsletter - a simple tool in the journey to wellness. Each issue is sure to carry something for everyone: from inspiring quotes and educational links to easy recipes and fascinating health news.
    Each of us strives for optimal health and happiness...and the goal of this newsletter is to act as a guide along the way. When we eat better, we feel better; and when we feel better, we live better.

roasted cashew & asparagus salad
 
ingredients:
raw cashews
organic honey
toasted coconut flakes
asparagus
radish
mixed greens
dried cranberries
olive oil
 
To roast cashews: Drizzle nuts with a small amount of honey.  Roast over medium heat. When aroma of honey and nuts comes alive, sprinkle with coconut flakes, stir & remove from heat. Remove from pan and let cool.
 
Roast  slivered asparagus in same pan with a light coating of olive oil until tips begin to brown.
 
Use mixed greens of choice and top with nuts, asparagus, sliced radish and dried cranberries.  Drizzle with a vinaigrette of choice.
 
(Tip: do not place freshly roasted nuts on paper towel to cool, as they will stick. Dry on hard surface and lighlty chop if nuts stick together.)

'dysfunctional'

CHICAGO (AP) -- The U.S. health care system is "a dysfunctional mess" according to a medical journal essay by a prominent ethicist at the National Institutes of Health. "If  a politician declares that the United States has the best health care system in the world today, he or she looks clueless rather than patriotic or authoritative," Dr. Ezekiel Emanuel wrote in Wednesday's Journal of the American Medical Association. Emanuel, who supports sweeping health care reform, said the U.S. spends $6,000 per person per year on health care, an amount that is more than 16 percent of the nation's gross domestic product and more than any other country. He also said Americans' average life expectancy of 78 ranks 45th in the world, behind Bosnia and Jordan. And the U.S. infant death rate is 6.37 per 1,000 live births, higher than that of most developed nations. Read more...
