Images of Blackness Film Series Making Sense of the Fires...20 Years Later

When: Thursday, April 26, 2012  @ 6pm - 7:30pm

Where: Haines Hall 135, UCLA campus

Darnell Hunt, author of Screening the Los Angeles "Riots," will lead a discussion of media images of the 1992 Los Angeles disturbances.  The events were triggered twenty years ago on April 29, 1992, when not-guilty verdicts exonerated  police officers caught on videotape brutally beating black motorist Rodney King.  The events -which the Los Angeles Times proclaimed "the worst riots of the century" - resulted in at least 51 deaths, more than $1 billion in property damage, and thousands of arrests.

How will 20th anniversary media retrospectives frame this important moment in American history?  Read more here, and join us for screenings and a spirited discussion.

Co-sponsored by the Academic Advancement Program (AAP).

Help change that reality. The Bruin Readmission Program is designed to allow access to campus resources for academically dismissed UCLA students.

BRP, like SRRP, is a collaboration between College Academic Counseling (CAC), the Academic Advancement Program (AAP) and the Campus Retention Committee (CRC). Through group and individual learning, the program helps dismissed students build the skills and confidence necessary for success while regaining their admittance to the university. COOKING TIPS FROM CHEF DONNA
Chef Donna Barrow

"Making the Perfect Springtime Frittata"

When preparing a brunch menu for larger groups I love to serve frittatas as the egg dish because the technique almost eliminates the tricky timing issue with temperamental scrambled eggs. With the addition of fresh springtime veggies - artichoke hearts, tiny asparagus, peas, morel mushrooms, watercress, Vidalia onions - this simplified omelet is also great for a quick one-pan lunch or dinner. Here are some tips to help you make the perfect frittata:

Choose the right pan. Nonstick sauté pans work well, if you're comfortable with them. However, don't use them if you plan to brown cheese on top of it under a broiler as these pans should not be heated above 350F. Another great choice is a well-seasoned cast-iron skillet. Stainless steel will work, but be sure to use the full amount of your fat of choice to prevent sticking.

Go easy on the added sauté ingredients. Because a frittata is an egg dish, let the proteins, veggies and herbs enhance, not overpower. Plus, if there if there is too much filler, it will break into chunks when sliced. A good ratio is 1 ˝ cups diced ingredients to 8 eggs.

Use fresh herbs. Fresh herbs are perfect candidates for this light and quick dish. Your taste buds and nose will thank you! (Flat-leaf parsley is a great springtime selection.)

Whisk room temperature eggs and an added liquid. Eggs need to be relaxed from the cold before whisking for better cooking and an added liquid, such as cream, milk, wine or broth helps to keep the eggs from toughening in the direct heat. Use 2 tablespoons of liquid for 8 eggs.

Cover the pan and cook on the stovetop with low heat. Stovetop cooking helps to keep the eggs tender and the covered pan stabilizes the humidity inside for the best texture.

Add salt only after the frittata is set. Salt will toughen eggs if added while they are raw.

Happy Cooking from The Happy Cooker!
