David Hello to all those who Imbibe,

 

   Tonight is our long-anticipated Rombauer Winemaker Dinner. I look forward to seeing many of you there. KR Rombauer will be flying in today and he will have a chance to see what Imbibe and what a town of great wine lovers like Bakersfield are all about. Before I leave you to relax and unwind after what I'm sure was a very long week, I want to tell you about two very limited wines that we will be receiving next week that you should consider.

First up is 2007 Ovid A2.7 Experiment Red.

Ovid is the brainchild of winemakers Andy Erickson of Screaming Eagle, and Michel Rolland, who considered by many, Mr. Bordeaux. This experiment of theirs was inspired by wines made in small, carefully crafted concrete tanks that are used by some of the most exalted Chateaus of Bordeaux. Andy and Michel were so inspired, in fact, that they built their own concrete tanks with guidance of French masons. This wine was fermented entirely in concrete and the wine exhibits the clear, true, pure flavors and expressions of the varietals and vineyards.

For those of you that have not heard of Ovid, they are neighbors with some heavyweights in Napa Valley: Continuum, David Arthur and Del Dotto. A blend of Cabernet Franc and Cabernet Sauvignon with a hint of Merlot, this wine has yet to be reviewed, but if it tells you anything, Ovid's 2007 Cabernet scored 95-97/100 from Parker and sells for over $200 a bottle. Only 12 bottles for Kern County and we got them. Very limited, and a steal at $90 each.

Second up is 2008 Ad Vivum Cabernet Sauvignon.

This wine is 100% Cabernet Sauvignon from the Sleeping Lady Vineyard, owned by Larry Bettinetti, in Yountville just south of Dominus Vineyards. The fruit was picked from 8 rows at the highest elevations of the vineyards that back up against the Mayacamas mountain range.

Winemaker Chris Phelps got his start in Bordeaux while he was studying at the Institute of Enology where he met the owner of Château Petrus, Christian Moueix. Christian persuaded him to work with him during the 1982 vintage in Bordeaux, when coincidently Chris met his mentor, the brilliant Jean Claude Berrouet, who served for 44 years as the winemaker at Chateau Petrus. Upon returning to Napa Valley, Chris went on to spend twelve years as winemaker at Dominus, making the 91, 92 and 94 Dominus vintages. For those that didn't get the chance, these were some of the finest cabernets I have ever tasted in America. This was followed by 7 years at Caymus Vineyards and Chris is now working at winemaker at Swanson Vineyards. Along the way Chris and Larry Bettinetti, a fifth generation farmer, became friends and started making experimental wines to test the grapes and some of their theories.

Chris has an intimate understanding of how to coax superb wine from great grapes and Larry was a man driven to do whatever it takes to grow the highest quality Cabernet Sauvignon possible. This bottling is the result of their efforts. The wine is deep ruby in color with an array of very exotic aromas of black cherry, spicy plum, super-ripe raspberry, anise and hints of graphite. Once in your mouth you will taste black cherry, raspberry, cinnamon, espresso and a kiss of sweet French oak. Very Limited, only 108 cases made for the world and we got one of them. Imbibe Price $125 each.

I hope some of you try a bottle or two of each of these wines and for those who choose not to, I can always say I told you so.
