We would like to take this opportunity to thank our guests, past and present, for helping us make this summer one of the busiest on record!

September is a time of change, the weather starts to cool, the leaves change colour, students go back to school and at the hotel, we say goodbye to some old faces and hello to new.  This month we welcome Vicky Jackson, who comes to us from Scotland, she will be working 2 days a week in Night Audit.  In August we bid a tearful goodbye to long time employee and friend, Chef Victoria, who has had to leave us for personal reasons.  Taking Victoria's place is Chef Marc, who comes to us from the Med Grill.  Although he has big shoes to fill,  we know Marc will do an outstanding job and judging from his plate sized pancakes and fluffy Frittatas, our waistlines wont be slimming any time soon.  (See Marc's Frittata recipe at the end of this newsletter)

An Evening with
On Saturday, November 3, Abigail's Hotel is teaming up with The London Chef to provide a night of exquisite accommodations with the tantalizing teachings of the Italian Countryside. Guests of this exclusive package will learn how to create the comforts and delights of rustic Italy in their own homes with an intimate cooking lesson followed by a relaxing stay at our hotel.

The Royal Theatre

The GoodLife Fitness Victoria Marathon is one of the most popular and scenic running events on the west coast attracting runners and walkers from all over Canada and the United States. This marathon is listed as one of the Top 10 destination marathons in North America.  Shorter racing options include a Half Marathon, 8K Road Race, and a 1.2K Thrifty Foods Kids Run and Marathon. The four events will attract about 12,000 participants.

Chef Marc's Roasted Vegetable Frittata



1 Red Pepper, diced

1 Zucchini, diced

8 Brown Mushrooms, quartered

1 tin of artichoke hearts, quartered

1 bunch of small asparagus, diced

2 cups of Whipping Cream

10 eggs

5-6 oz. of Soft Goat Cheese (originally chevre)

Salt, Pepper, and Olive Oil



  • Once your vegetables are cut season them with olive oil, salt, & pepper.
  • Roast at 250 for 20-30 minutes (asparagus will only take about 10 minutes). Vegetables should be roasted individually as they all cook at different rates.
  • Whip your eggs & cream together
  • Line a small roasting pan with parchment paper.
  • Layer your roasted vegetables in the pan.
  • Sprinkle goat cheese over the top of your vegetables
  • Pour egg custard over everything and back at 350 for 25-35 minutes.
  • Frittata should be firm to the touch but still a bit soft.
