Chef Matt's Oatmeal Raisin Apricot Cookies
By popular demand, Chef Matt has been persuaded to share the recipe for his delicious welcome cookies:
- 1/2 lb Butter
- 1 cup Sugar
- 3/4 cup Brown Sugar
- 1 tbsp Corn Syrup
- 2 Eggs
- 1/4 tbsp Vanilla
- 1 1/4 cups of Flour
- 1/4 tbsp Baking Soda
- 1 tsp Salt
- 3 cups Oats
- 1 1/2 cups Raisins
- 1/2 chopped Apricots
Cream the butter with the sugar and corn syrup
Add eggs and vanilla until fluffy
Stir in flour, salt and baking soda until well mixed
Fold in oats, raisins and chopped apricots
Spoon onto a baking sheet in "cookie size" lumps
Bake at 375 degrees for 8-10 minutesEnjoy!
