We stayed at Abigail's to
celebrate our 40th Wedding Anniversary and enjoyed this small hotel very much.
The staff is very efficient, helpful and knowledgeable. We looked forward to the
gourmet breakfasts each morning. The short walk to the centre of Victoria and the harbour
area was very pleasant. We stayed in the carriage house and were surprised by
the many small touches which made our stay more wonderful......bathrobes,
cookies, bottled water, tea in the library, coffee machine for use any time of
the day, hors d'oeuvres in the library...etc I would recommend Abigail's to
any of our friends.

"Waited on hand
and foot, extraordinary gourmet breakfast, and plush
bed..."

We found this hotel by looking up
B&B's in Victoria on hotels.com. I wanted a luxurious,
B&B within walking distance of the popular sites of Victoria {Parliament
building, Empress Hotel, the marina etc.} but not right in downtown. It was a
perfect fit. The huge Victorian mansion sits at the end of a cul-de-sac in a
residential neighborhood. It is very quiet. We stayed in the Country Room. It
had a very nice bathroom with marble floors and a rain can shower head. The
linens were top of the line.
The breakfast at the Abigail is an
experience I will not soon forget. It was a three course meal delivered with
exemplary service. Matt the chef, Chris the head of house keeping and Wes at the
front desk not only made us feel completely at home, but each went above and
beyond to make our stay perfect. The only thing I would say that was less than
excellent was the views from window of our room.

quality small hotel with spacious well appointed rooms and very friendly helpful
staff. Good location 5 minutes from downtown bars and restaurants, so quiet but
within easy striking distance.

"The Most brilliant bed and breakfast!!!"

| This was a plush, rustic
bed and breakfast, oozing class and charm. The service
personnel were outstanding. The rooms were really impressive. Each morning, a
creative breakfast menu was available in a cozy atmosphere. Complimentary
pre-dinner hors d'oeuvres were also a highlight. There was a large,
antique-filled 'common room' downstairs with classical music, library and
computer available. Free internet wireless was also available throughout. This
was a magnificent building in a truly outstanding location.

Great
hotel - Fantastic Staff!
My husband
and I spent 3 days in this hotel in December /09 to celebrate our 40th Wedding
Anniversary and to say we were impressed would be an understatement! We felt
right at home as soon as we walked through the door. The staff is so attentive
to our every need, and is more than happy to book a table at a recommended
restaurant or book seats for a theatre show. Being able to park our car and
walk a few blocks and be right downtown with all the amenities was a real plus.
Our room was spotlessly clean and very cozy. Special thanks to Matt for the
wonderful breakfasts, the cheery morning chats and the restaurant referrals. We
will definitely be back.

Gourmet Cooking Tip of the Month
'Tis
the season to start out with some lower fat recipe ideas!
For Low
Fat Cooking, try these tips:
* Get
into the habit of measuring the oil you use while you cook,
rather than just pouring it out of the bottle. It will be much
easier to moderate the amount you use.
*
Use non-stick cookware so that you don't have to use as much,
if any, fat. When sautéing, use a small amount of chicken broth
or wine instead of butter or oil.
* To
make fat-free broth, chill your meat or chicken broth. The
fat will rise to the top, and you can remove it before using
the broth.
*
Many vegetables and fruits, including potatoes and apples,
retain many of their nutrients in their skin. So when possible,
leave the skin on your fruits and vegetables and cook them whole.
*
Vitamin C is destroyed quickly in cooking - so cook your
vegetables with Vitamin C in the smallest amount of water
possible and for a short amount of time.
* Stock up
on spices. One of the keys to cooking low-fat and not
getting bored is to spice your food well. When you have finished
your recipe, always taste it and adjust the spices to meet your taste.
*
When cooking a dish with both vegetables and meat (i.e. in stir fry's
and stews), reduce the amount of meat by 1/3 and increase the amount
of vegetables by 1/3. You will hardly notice!
*
Thicken gravies with milk or broth blended in the blender with
flour. Be sure to cook long enough to remove the raw flour taste.
You'll never notice the lack of fat.
*
Use olive oil for cooking when appropriate. It adds to the taste
of the dish and is better for you.

Fun & Refreshing Take on Fruit Salad...
Fruit Skewers with
Dipping Sauce
Ingredients
· 1 medium tart apple cut into 1" chunks
· 1 medium pear cut into 1" chunks
· 1 tablespoon lemon juice
· 1 cup pineapple chunks
· 24 grapes
· 24 fresh strawberries
Coconut Dip:
· 1-1/2 cups vanilla yogurt
· 5 teaspoons flaked coconut
· 4 teaspoons orange marmalade
Directions
1. Toss apple and pear with lemon juice.
2. Divide fruit into 12 portions and thread onto wooden skewers.
3. Combine dip ingredients in a small bowl and serve with the
kebobs.
Serves 12
