We're here visiting this beautiful city after traveling around Vancouver and the Okanagan. What a fantastic vacation! We hope to live in British Columbia one day - the weather is warm, the people are friendly, the cities are beautiful. We come here to celebrate my 30th and our 5th Wedding Anniversary. This was also probably our last holiday with just the two of us as we hope to start a family over the next year. New Grandchildren to Spoil!


Innkeepers Ellen and Russ Cmolik are proud to announce the arrival of not one, but TWO grandbabies, born just weeks from each other! Born to parents Nick and Lisa Saklas, Alexander Jacob (AJ) Anthony Saklas arrived on April 9, 2009 at 7:40 pm, followed shortly by his cousin Areia Elle Boyd, born May 8th, 2009 at 4:54 pm to proud parents Athena and Justin Boyd. The forecast ROE (Return on Enjoyment) of this investment looks favorable, states new Daddy Nick!

 

The Great Cmolik Driving Adventure from Victoria to China and Beyond…


To continue the excitement and adventure of this status, new grandparents Russ and Ellen have recently begun Part 1 of their life-changing road tour called “The Great Cmolik Driving Adventure”, beginning in China and leading them by cars – actually two bio-diesel fueled 2008 Range Rovers 3.6 liter TDV8, through the regions of Russia, Mongolia and Europe. This family trip was originally planned for 2008, but was postponed until this year and fortunately for little Areia and AJ, they get to join in on the fun at only a few weeks old!!  The 2008 Great Race was to be a modern celebration of motor transport on the 100th anniversary of the 1908 Great Race by following the same route with two classes of vehicles – antique and future fuels divisions. Recent Culinary Events at Abigail’s Hotel


Executive Chef Matthew McGinn showcased his creativity by hosting a Gourmet Cooking and Wine Pairing Class with Victoria’s “Chalet Estate Winery”, a sold out Mother’s Day Brunch, and a Beer Tasting Event with Victoria’s “Vancouver Island Brewery”. These special events were enjoyed by locals and hotel guests alike, appreciating the knowledge they gained about preparing West Coast Cuisine and beverages. Matt’s first class menus included Quinoa and Candied Salmon and Organic Cowichan Valley Chicken Breast or Mini Bison Burgers, Sooke Trout and Chocolate Oat Cake…Scrumptious!

CHEF'S SECRET RECIPE

 

Apple Spice Cake


Cake Ingredients:
¼ cup butter
½ cup white sugar
2 eggs
1 tsp vanilla
2/3 cup sour cream
¼ cup apple juice
1 ¾ cups all purpose flower
1 ½ tsp baking powder
½ tsp baking soda
1 ½ tsp cinnamon
¼ tsp nutmeg
½ tsp salt
1 tsp ginger (ground)
¼ cup chopped crystallized (or candied) ginger

 

Cake Preparation:
Cream together butter, sugar and vanilla, then add eggs, one at a time. In a separate bowl, combine sour cream and apple juice. Combine butter and egg mixture with juice mixture. In another bowl, sift together flour, baking powder, baking soda, cinnamon, nutmeg, ginger and salt. Then add chopped ginger. Mix together dry ingredients with wet ingredients and pour into a greased tube pan. Bake at 325 degrees for 35 to 40 minutes.

Topping Ingredients:
¼ cup butter (melted)
¾ cup brown sugar
2 cups apples (peeled, cored and finely chopped)
Topping Preparation:
Melt butter in a large frying pan, then add brown sugar. When combined, add apples and sauté until apples are tender. Serve warm with wedges of cake and lightly sweetened whipped cream. Enjoy!
