Spring.  It's almost here.  Personally, this has been a challenging winter, and I'm looking forward to getting outside more, seeing more light, and stretching my whole body and spirit towards more warmth and light.  I hope you are too.

As many of you have requested, I'm including a new recipe below for you to try.  We'll soon be moving into the expansive season of green vegetables that start to appear in the spring, but in the meantime, it's still cold and I, for one, want warming foods, like root vegetables and stews.  So here's one I cooked just this afternoon.

RECIPE: PAINTER'S FISH STEW STEW

 

My sister, who lives in New England and is an incredibly creative writer, posted a "Dear John" letter to the snow on Facebook today, saying she was over it and asking to please have more space, and maybe she'll be interested again in several months.  I think a lot of us are feeling this way this time of year: worn out by a long winter and just plain done with it. 

This fish stew that I made today both warmed me and cheered me up with its striking color, in contrast to some of the paler tones of a lot of winter food (think: potatoes).  I wish I had thought to take a picture of it, but I was so entranced by it's abundant reds that I just dove in and ate it.  Anyway, it was beautiful, hearty, and quick and easy to make.  I'm calling it "Painter's Fish Stew" because I am a painter and it made me want to paint. 

PAINTER'S FISH STEW

beetsPrep & Cooking Time: about 25 minutes
Servings: 2

Ingredients:

1/2 lb cod fish, cut into 1-inch cubes
1/2 medium-sized onion or 1 small onion
1 medium-sized red beet, with the greens
1 medium-sized black radish, or a 3-4 inch chunk of daikon radish
1-2 inch wide hunk of purple cabbage, chopped
2 tbsp butter or ghee (clarified butter that contains no dairy)
2 tbsp fish or beef stock (optional)
1 tsp cider vinegar
Sea salt

Directions:
Peel and chop the onion, then place it in a medium saucepan with about 1/4 inch of fresh water and 1 tbsp butter or ghee.  Cook on medium heat until the onion starts to soften. 

Peel the beet and radish, and dice both (chop into small cubes).  Chop the cabbage.
Chop the beet greens and stems and set them aside.  

Add the beet and radish to the pot with the onion and continue cooking on a low heat.  Add stock and cook for about 5 minutes, then add cabbage and cook for another 5 minutes or until the  vegetables are soft enough to easily put a fork through.  (If the liquid in the pot starts to evaporate, add a little more water to cover the bottom of the pot and create a little sauce.) 

Add the cod and the rest of the butter/ghee and stir.  Cover and continue cooking for 3 to 5 minutes until the fish is flaky.  Add the beet greens, stems, cider vinegar, and about 1/4 tsp salt.  Stir.  Cover and cook another 2-3 minutes.  The beet will have turned everything a deep red color.

Serve hot, either by itself or over quinoa, buckwheat or grain of your choice.  I like to add a small spoonful of umeboshi paste just before serving, which adds a salty tang and is said to aid digestion and detoxification.  You could also try a spoonful of miso paste. 

Variations: 
Experiment with different vegetables, such as turnips, parsnips, or burdock root.
Add a small handful of cooked legumes (such as red beans, garbanzos or peas) for an even heartier stew.
