Happy New Year!!  I hope your new year (and new decade!) is off to a great start. 

I'm pleased to announce that I have a brand new website for my health & wellness practice, which is now called Power Life Balance. A Powerful Sense of Wellbeing, painting by D GallersPower Life Balance is a phrase I came up with to describe my approach to health & healing, and really, to healthy living in general.  I certainly strive for balance in and between all areas of my life -- and direct my work toward clients seeking to achieve greater balance in their health and life. 

Yet I also want to acknowledge that finding balance is not always the quiet process we tend to associate with things like meditation or qigong, cooking whole foods, or being in nature (all of which I encourage you to do, don't get me wrong!).  Sometimes getting to the balanced place requires navigating some wild terrain first, and not taking it lying down.  It takes energy and, yes, power, to make changes in  your life and achieve balance.  And the balance, in turn, feeds your energy and sense of power--to make great choices for yourself and live an abundant, vibrant, fun life.  (More on the meaning of Power Life Balance on this page of my website here ...) 

I've got a bunch of exciting projects in the works for the coming year, including weight loss & health coaching groups, chakra tai chi classes, and cooking classes, so stay tuned. 

In the meantime, I've been getting lots of requests for recipes, -- glad to hear you are cooking!! Here's one for a delicious and SUPER EASY rice pudding (dairy, gluten and sugar free and yes, still delicious).

RECIPE: Coconut Rice Puddingricepudding


For you novice healthy food chefs, this recipe is EASY!!! This yummy treat can be whipped up in under half an hour (if the rice is already cooked).  It's sweet without being cloying, and can be served warm or cold.  You can dress it up with dried or fresh fruit and spice it however you like.  It is dairy, gluten, egg and sugar free. 

INGREDIENTS:Coconut rice pudding

1 cup cooked rice  (I used jasmine rice, which has a lovely, sweet fragrance.  You can use any type of short grain rice, which is starchier and will give you a stickier consistency for the pudding.  Brown or white rice will both work fine.)

1 can coconut milk (approx 14 oz. -- regular, not low-fat)

4 tbsp maple syrup (or sweetener of your choice)

3-4 tsp kuzu root starch

1 tsp cinnamon

1/4 tsp sea salt


DIRECTIONS:

Cook the rice.  If you are using brown rice, remember to soak it for several hours (ideally overnight) in water before cooking, to aid digestibility.  Drain the soaking water and rinse the rice in a collander before cooking.  You can cook the rice in advance and refrigerate it until you're ready to make the pudding.

Place cooked rice in a pot and add the coconut milk and maple syrup.  Stir to mix well. 

Cook on low heat for 5 minutes, stirring constantly.   All ingredients should be well blended and will start to thicken and "gel".

Dissolve kuzu root starch in 2-3 tbsp water and stir, then add to cooking pot.  The kuzu will help to thicken the pudding, and is also good for digestion. 

Reduce heat to simmer, stirring pretty constantly, for 10-15 minutes.

Serve warm or chilled.  (Chilled pudding will have a thicker consistency.)

OPTIONAL: 

Add a few drops of vanilla extract or other spices such as nutmeg, cloves, or ginger.
Add some raisins, currants or other dried fruit in the last few minutes of cooking. 
You can also serve with some fresh fruit on top -- I like mine with blueberries!

Feel free to adjust the sweetener to your own taste, if you like a sweeter or more savory rice pudding.  You can also experiment with other sweeteners such as honey, agave or yacon syrup. 

Makes about 6-8 servings.
