Greetings!
The frost is (almost) on the pumpkin, at least here in the northeast, which means it's cool enough to start using your oven on a regular basis. Just for fun, I wanted to share a recipe that I was inspired to create just yesterday. It's easy to make and very seasonal, and it's a healthy alternative to sugary Halloween treats. SCRUMPTIOUS AUTUMN SPICE CAKE

| The other day, I had a cup of coconut milk left over from a curried vegetable dish I'd made for dinner, and it occurred to me that it would be fun to try baking with it. This recipe is a result of that brainstorm.
This moist, delicious spice cake is gluten and dairy free. It's easy to make, and leaves your kitchen smelling cozy, sweet and spicy all at once. I made it with sweet potato, but you can also substitute canned or fresh pumpkin.
INGREDIENTS: 1 1/4 cup white rice flour 1/2 cup garbanzo bean flour 1/4 cup almond meal/flour 1 1/4 tsp baking soda 1 tsp baking powder 1/2 tsp sea salt 1/2 tsp cinnamon 1/8 tsp nutmeg 1 tsp garam masala dash of ground cloves dash of dried ginger 2 eggs, lightly beaten 1/2 cup extra virgin coconut oil (melt if solid) 1 cup coconut milk 1/4 cup raw agave syrup 1 medium sweet potato, peeled, steamed and mashed (about 1 cup mashed)
DIRECTIONS: Preheat oven to 350 F. Combine all dry ingredients in a large bowl and mix well. In a separate bowl, combine eggs, oil, coconut milk and agave. Mix together, then mix in the sweet potato and get out as many lumps as you can! A little at a time, add the wet mixture to the dry mix. Mix thoroughly. Grease a 9" square baking dish (I used glass) with coconut oil, and dust with rice flour to prevent sticking. (I actually forgot to dust with flour and it worked out fine anyway, but will be easier to get out of the pan if you do it.) Pour the batter into baking dish and shake gently to distribute evenly across the dish. Bake for 30-35 minutes until a toothpick inserted into the middle of the bread comes out clean (dry). The bread will be smooth and brown on top and lightly browned on the sides.
Serve warm or cool. Can be served plain or with the topping of your choice (jam, honey, butter if you eat dairy, etc. I sometimes make a spread with coconut oil (which is solid/creamy at temperatures below about 75 degrees), raw honey and a little maca powder. The sky's the limit! Honestly, I mostly just like it plain.
Notes: --If you don't have almond meal, you can just use 1 1/2 cups rice flour.
--Garam masala is a typical Indian spice blend containing ingredients such as cardomom, nutmeg, coriander, cloves, cumin, cinnamon, star anise, and pepper. If you don't have any, just add some more cinnamon, nutmeg, cloves, and any of the others you do have.
--Try substituting canned or fresh (cooked and mashed) pumpkin for the sweet potato
--I like my spice bread fairly savory, as in, not too sweet. If you prefer a sweeter bread, add another 1/8-1/4 cup agave and another 1/8-1/4 cup of any of the flours.
--You can try substituting honey or maple syrup for the agave. With maple syrup, you may need to add a bit more flour if the batter is too liquid. You may also need to bake a few minutes longer.
-- I think this recipe would also make great muffins! Remember to grease and flour your muffin tin, and bake for a little less time. Check the muffins after 20 minutes and then keep baking until the toothpick comes out clean from the center of one of them.
