SUMMER RECIPE: CILANTRO PESTO Headline
cilantro small The herb cilantro, sometimes called Chinese parsley, is actually the leaves of the coriander plant, which also produces the coriander seed that is used as a spice as well as for its medicinal properties.  Cilantro and coriander are popular in Asian, Mexican and Caribbean cuisine.  The leaves have a strong smell and add a refreshing taste to soups, fish, poultry, or vegetable dishes.

Cilantro contains the nutrients calcium, iron, vitamin C and carotenes, as well as essential oils with antibacterial properties.  It is considered a digestive aid and helps promote the secretion of gastric juices.  It can also help with the detoxification of heavy metals such as mercury! 

I created this recipe this summer when I was looking for something to brighten up a meal of baked wild salmon.  It was delicious as a topping for the baked fish, and can also be used for poultry, eggs or meat.  I've also used it as a tasty dip for cut up vegetables.  You can also use it, of course, on pasta, or as a spread for sandwiches. 

I make a non-dairy version, but you can also make it with cheese.  The amounts of the ingredients are approximate; you can vary them according to your taste. 

INGREDIENTS:
2 cups (about 1 bunch) fresh cilantro leaves, washed
1/2 - 3/4 cup shelled hemp seeds (you can also use pine nuts)
1/4-1/2 cup extra virgin olive oil
1 small (or 1/2 large) zucchini
1/4-1/2 lemon, squeezed

Optional Additions:
1-2 cloves garlic (add one at a time, as raw garlic is extremely pungent!)
1/4 cup Parmesan or Romano cheese
grated black pepper

Directions:
Place cilantro leaves into a food processor and pulse until finely chopped.  Add zucchini to cilantro leaves and chop again.  Add hemp seeds, olive oil, lemon juice, and salt (and optional additions) and blend well in food processor to a creamy paste.  You may adjust the consistency and texture by adding extra oil or zucchini (or even a bit of water). 

You can also make this recipe in a blender or high speed blender, but will need to add more liquid ingredients in order for it to mix well.  Add a little at a time, mix, and evaluate until you get the texture you want. 

You can store extra pesto in the fridge for several days or freeze it.
