As Thanksgiving approaches, I could not resist sharing with you one of my new favorite dessert recipes--Sweet Pumpkin Custard. It's healthy, light and refreshing, and goes great with traditional Thanksgiving fare. And it's easy to make.

Process Acupressure
|
|
Process Acupressure is a therapeutic, hands-on bodywork modality that uses traditional methods based in classical Chinese medicine to support the body's own balancing and healing processes at a very deep, core level. It's great for physical symptoms and specific health issues, as well as stress, trauma, emotional blocks or life issues -- which are all too often connected, anyway.
In 1998, a series of Process Acupressure sessions helped me get me "out of my head" about
my life and reconnect with my heart and body, to feel in harmony with
myself inside and out. It also helped me unravel and gain awareness about chronic pain and other health challenges I was facing. Process Acupressure enabled me to organize some of the loose ends in my life and get on a path that was aligned with what I can best
describe as my soul's purpose. I began
training in Process Acupressure in
1999 and have made it central to my bodywork practice ever since.
Our bodies become storehouses for all our life experiences--physical, emotional, mental, and spiritual. It often takes a multi-tiered approach to make lasting changes when we have a fundamental imbalance in one or more of these areas. Process Acupressure uses gentle touch at key points along the energy pathways of the body (called meridians) to release restrictions and rebalance energy flows in the body. The points are accessed via a style of touch called "interface" that contacts both the structure and energy of the body at once. This facilitates connection, revitalization, and healing on a "whole-being" level.
Sessions take place clothed on a massage table. Many clients report
going into a deeply grounded state from which they gain awareness about
key health or life issues, while at the same time experiencing an
energetic release that is often accompanied by relief from physical
symptoms that have been troubling them.

THANKSGIVING (or anytime!) RECIPE
|

PUMPKIN CUSTARD
 This delicious recipe is vegan, as well as gluten, soy and sugar-free. It's easy to make and makes about 8 servings. You can make it a day in advance of serving.
Ingredients: 2 cups pumpkin, cooked, drained and firmly packed (or use canned pumpkin -- the plain kind, not the pie filling mix) 2 tsp vanilla 1/2 tsp cinnamon 1/2 tsp powdered ginger 1/8 tsp ground cloves 1/4 tsp sea salt 4-5 tbsp maple or agave syrup 2 cups water, cold or room temperature 3 tbsp kuzu root starch
Combine water and kuzu root starch in a saucepan. Stir to mix and let stand for a few minutes. The liquid will look milky.
Heat over a medium flame, stirring constantly, until it starts to thicken. The solution will take on a gel-like consistency, like a thick sauce. Remove from heat.
Combine pumpkin and the remaining ingredients in a blender. Add the kuzu mixture and blend until smooth. Return the whole mixture to saucepan and heat over a low flame, stirring constantly, for about 10 minutes until it thickens further but can still be poured.
Pour into individual custard cups and chill for 20-30 minutes until it sets to a custard consistency.
Serve plain or with a dusting of nutmeg. Or garnish with some crushed nuts or dried berries, or a drizzle of maple or fruit syrup. If you're not vegan, you can top the custard with a dollop of plain yogurt or whipped cream.
**Never cooked with fresh pumpkin before? Here's how: Use small sugar pumpkins, not the large ones that become jack-o-lanterns! One sugar pumpkin will yield about 2 cups of cooked pumpkin. Cut pumpkins in half cross-wise and remove the seeds and stringy stuff. Place cut side down in a baking dish and add about 1/4 inch water to the bottom. Bake at 350 degrees for about 45 minutes, until soft, then cool. Scoop out the flesh and discard the skins. Place the flesh in a collander and drain for about an hour (or, for quicker draining, squeeze the excess liquid through the collander with your hands!).
