COMFORT ZONE*

There's about to be an explosion of zucchini in gardens everywhere. When we were little, I remember Mom receiving sacks full from neighbors. Seems like she tried 101 different ways to cook zucchini, but in the end, our favorite was zucchini bread. And just like carrot cake, in our family we consider it part of the vegetable family.
MOM'S ZUCCHINI NUT BREAD RECIPE -- FULLY LOADED!
3 eggs 1 cup oil 2 cups sugar
2 cups grated zucchini
3 cups flour
1 t. salt
1 t. soda
1 t. cinnamon
½ t. baking powder
1 cup chopped nuts
3 t. vanilla
Bake at 350 degrees for 1 hour. Makes 2 large loaves or 3-4 small.

Okay, I admit in. In our family we associate home-cooked meals with family, good times and yes, comfort. Comfort food is all about bringing us back home again and around here we all have our favorites. I'm a fan of Mom's chicken fried steak. My sister Lori loves Granny's cobbler. We make no bones about waking up at 3am to polish off the last of the macaroni and cheese and there have been wrestling matches over the last piece of huckleberry pie. We don't apologize for our love of mashed potatoes. We consider Chicken & Dumplings it's own food group. Comfort food fans now have a place on this website to congregate and worship!
