Greetings!
We've been busy here at NuCulinary the past few weeks. Each day seems packed with more appointments than the last, and not enough hours in the day to go around. (Or maybe the passing of the fall equinox and seeing less and less daylight just makes it feel that way!) But shorter days also signal that it's apple time, and I have the perfect, easy tart for those who are also short on time. Plus, farmers markets will be highlighting their apples all this month, be sure to head out and try a new variety or two!

Quick & Easy Apple Tart
|
1 whole sheet Puff Pastry, cut in half lengthwise - 4 apples (about 2 pounds), sliced, not peeled
- ¾ cup packed brown sugar
- 1 tablespoon cinnamon
- ½ teaspoon ground nutmeg
- ⅔ cup golden raisins, plumped in warm water or liquor
- ¼ teaspoon salt
1. Preheat oven to 425 degrees.
2. Place puff pastry rectangles onto a baking pan lined with parchment or silpat mat.
3. Cut apples into uniform slices. Combine sugar, spices, raisins and salt to apples. Stir to combine. Allow to sit for 15 or more minutes to allow fruit to soak up flavor.
4. Arrange apple slices on the pastry rectangles in a straight line, overlapping as you go. Leave a ½-inch border around the apples. Bake for 18 to 20 minutes, or until pastry is puffed and golden brown.
5. Cool on cooling rack. Serve plain, with caramel topping, whipped cream, or a sprinkling of powdered sugar.
