Happy 4th of July!
This week I've got a red, white, and blue recipe for your picnic table. If you're just pulling out the grill for the first time this season and want some tune-up pointers, be sure to come see me at the University District Farmers Market this Saturday. I'm bringing in a slew of master grillers who will get you up to speed with their expertise and ideas.
Classes-wise I've scheduled a new kids class this month at Bella with an Asian favorites menu, and I'm doing an Art of Sushi class there in August.

Grilled Halibut with Blueberry Herby Salsa

We've had some sunshine so now you can start plucking those herbs from your herb garden. This salsa recipe is an excellent way to put them to use, and so easy too because you can modify it with whichever herbs, fruits or berries you love or have fresh on hand. Use it to top various meats such as salmon, halibut, pork and beef. (If you're making this for July 4th, be sure to use halibut to complete the red, white, and blue theme.) Grilled Halibut with Blueberry Herby Salsa Recipe by Naomi Kakiuchi, NuCulinary Serves 4 Salsa: - 1 cup blueberries
- 1 cup finely diced mixed red & yellow peppers
- 2 finely diced shishito peppers (mild)
- 2 small green onions, chopped fine
- ¼ cup chopped fresh shiso and mint leaves
- 2 tablespoons chopped fresh Thai basil or cilantro
- 1 tablespoon red wine vinegar
- Juice of 2 limes
- Juice of 1 lemon
- ½ teaspoon sugar (to balance sharpness of citrus juices, optional)
- Salt and pepper to taste
- Fresh sprigs of mint and cilantro for garnish
Fish: - 1½ pound halibut fillets, cut into 4 pieces
- Extra-virgin olive oil
- Coarse Salt & freshly ground black pepper to taste
Make ahead: Combine all the ingredients for the salsa in a small bowl; refrigerate 2-3 hours to allow the flavors to develop. Brush halibut with oil and season well with salt & pepper. Grill over hot coals, skin side down. Plan on 5 minutes per 1-inch of thickness. Lower heat to low or if on charcoal, move to the cooler side of the grill, put on cover and allow top to finish cooking. For cooking using the stove: Heat oven to 350 degrees. In ovenable pan on top of your stove; add oil and heat on medium high; then add fish skin side down. Sear fish until half cooked (about 5 minutes), then place in the oven to finish (about another 5 minutes). Remember the rule of thumb is 5 minutes of direct cooking per inch of thickness. Serve the salsa at room temperature or warm gently and serve. Place each fillet on a plate & top with warm salsa, garnish with herbs.

Celebrate the coming of summer and barbecue season - and watch FREE master chef and producer classes all day long at the market!
The U-District Farmers Market is chock full of farmers and ranchers who raise/produce some of the best meats, poultry and salmon available anywhere in Seattle - all of it local, sustainable and delicious.
On Saturday, July 2, market shoppers can watch fun, expert demos on filleting fish; how to grill the perfect burger; how to cut up and grill a whole chicken, and oysters on the grill. Learn tips on the best types of meat (beef, pork and lamb) for your barbecue...and how to grill it all to perfection.

Becky Selengut, chef and author of Good Fish and the Cornucopia Cuisine blog will show shoppers her secret to preparing the perfect fillet of fish. Becky will sign copies of her book which features sustainable seafood recipes from the Pacific coast.

Farmer George Vojkovich (Skagit River Ranch) will be on hand to show folks how to make and grill the perfect hamburger and maybe some specialty sausage too.
11:15 - 11:45
Farmer Janelle Stokesberry (Stokesberry Sustainable Farm) is an expert on all things chicken and loves to teach home cooks how to make the most out of every part of the bird. Learn how to cut, quarter and grill a whole chicken.
12:00 - 12:30
Master butcher, Doreen Nelson, of Smokey Ridge Meats (Chewelah) will be on hand to explain and de-mystify fresh cuts of lamb, pork and beef for the grill and how to get the most value out of cheaper cuts of meat.
12:45 - 1:15
Lissa James of Hama Hama Oyster Company will be on hand to show off her excellent fresh oysters and best ways to grill.
All Day
Julie Reinhardt, local author of She-Smoke, will be on hand to oversee the grilling and offer expert insider advice all day long! Julie is co-owner of Smokin' Pete's BBQ in Ballard.
And vegetarians should know that recipes and great grilling tips for veggies and seasonal fruits will also be available.

Chinatown Dragon Fest
Time: Saturday, July 9 ~ 12-8pm and Sunday, July 10 ~ 12-6pm Location: Hing Hay Park at S. King St. & Maynard Ave. S. in the International District Seattle's iconic Chinese Gate and beautiful Hing Hay Park, are the setting for this Seafair Festival brings the streets to life with everything from spirited Chinese lion and dragon dances, to captivating martial arts demonstrations and Japanese Taiko drumming. Plus there will be historic walking tours, a large-scale outdoor Asian market and cultural activities for people of all ages. New at this year's Festival will be a Food Walk with many of Chinatown-ID's 85 restaurants offering up a variety of discounted tastes to give visitors the chance to sample cuisines from around the world. Also in front of Phnom Penh Noodle House will be our friend and instructor Sam Ung doing his famous and amazing fruit and vegetable carved creations. Kirkland Uncorked is a regional showcase of art, food and wine on the picturesque shores of Lake Washington.
Don't miss this year's Tasting Garden which features wine tasting, Pyramid Breweries beer by the glass, and enticing bite-sized feasts from Kirkland and Northwest restaurants. Three chefs will face off in the highly anticipated grill-off Saturday at 5:00pm. This is your chance to see three masters grill up a storm watch Nancy Leson and yours truly emcee the contest.
