Greetings!
Last week I attended a benefit dinner and auction for EDI (Executive Development Institute). Let me tell you, these months of planning are so fun with all the Eat, Drink and Be Merry Food & Decor volunteer committee. But I have to say, it was a relief to see it all come together in a spectacular night. (A big thank you to my fellow planning committee members!)
Chefs Dalis Chea and Amanda Herrera from Herban Feast Catering served Hispanic and Asian fusion dishes for the main course, plus there was an appetizer medley by the chefs from Nettletown, El Comal, and Thoa's. Aminta's Salvadorean pupusas were out of this world, Christine made perfect mini skewers of seared duck breast with her own pickled rhubarb wrapped in a lemon balm leaf, and Thoa's spring rolls, special recipes just for EDI... It was a blast working with them and I'm sure we'll see each other again soon. You know, the power and support of the relationships EDI fosters just isn't surpassed. It's a great example of EDI in action and why I so value this organization.
Coming up on the calendar is the 21st annual Walk for Rice on June 18th. This community walk-a-thon raises funds for the ACRS food bank. Since we are moving into the grill season, I thought you might like Chef Toby's ever popular Kalbi Ribs recipe. Just mix up the marinade in the morning or night before, put in your ribs and grill for a perfect easy supper or Memorial Day lunch.

Here's a rib recipe to try at your next picnic. These grilled beef short ribs are one of the most famous dishes of Korea. The flavor is a perfect balance of sweet and savory. Don't worry if you start to crave Kalbi all the time, it's so easy to make you'll be satisfied in no time!
Note that the cut of short ribs you're looking for is called flanken. In this case, strips are cut across the bone, rather than between them. It looks a long, thin strip of meat with 3 or 4 small rib pieces along the side. Find it at your nearest Uwajimaya or Asian grocery stores.
Serve with panchan, the little side dishes that accompany every Korean meal. The most famous is kimchi, spicy fermented cabbage, some shredded carrots and wrapped with lettuce. My new favorite Kim Chee is at the West Seattle, Columbia City or University Farmers Market. It is fresh packed and spicy but not too hot. Look for the Firefly Kitchens booth.
Kalbi Beef
Recipe by Toby Kim
Serves 4
Marinade:
- 1 cup soy sauce
- 1 tablespoon garlic, minced
- ½ cup scallion, thinly sliced
- 2 tablespoons sesame seeds, toasted and ground
- 3 tablespoons sesame oil
- ¼ cup sugar
- 3 tablespoons honey
- ½ teaspoon black pepper
- Combine marinade ingredients.
- Add short ribs and mix to distribute marinade thoroughly. Marinate for a minimum of two hours or overnight in a non-reactive container (a zip lock bag works well).
- Grill short ribs over high heat until done and slightly charred.
