Come visit me at Kirkland Uncorked this weekend. I will be doing a grill demo from 2-3:00 on Saturday inside the Tasting Garden. What's on the menu--how to grill salmon to perfection, miso marinated salmon in sushi hand-rolls. And then.....

3 tips for faster prep time in the kitchen
 Tip 1: Read your recipe carefully and assemble ingredients.
Now I know that sounds obvious but do you read directions before you assemble something new or after you can't figure it out? Yes, me too but in the kitchen that can lead to less than perfect results and if you are going to put in the effort, why not weigh it to your advantage. The practice of mise en place (everything in its place) is getting all your ingredients washed, cut and measured before you begin to cook. In Asian cooking this is a must, as cooking times are intense and short and your dish can over cook with just a few minutes too long in the skillet. Mise en place your meal and you will feel like a TV chef in your own kitchen!

Tip 2: Combine jobs.
I am not advocating multitasking but doing the little jobs between big ones. When you are in the kitchen, look around and do the few dishes in the sink while you are waiting for your burner to warm up or wipe out that cupboard that is closest to the stove. You will find that those little cleaning passes will add to your accomplishments of the day and each day, your kitchen gets a bit more orderly and a pleasant place to nourish yourself.

I may sound like a broken record but it is true, you will save yourself so much time and add so much pleasure to your cooking with practicing and learning the right way to hold, cut and care for your knives. It is one for the most useful and potentially dangerous piece of equipment we have and their is no class that we get before we buy our $2000 or $19.95 set. Learn to use your tools! If you are decent weilding your knife, come and we will show you something new and wonderful.

Everyday Asian Pantry: Southeast Asian Noodles - Renton Uwajimaya

Each week our Renton Uwajimaya classes focus on a different Asian country's pantry to allow you to explore and learn about authentic flavors and culture in little sizable bites. Chef Toby will demonstrate an dinner and then give you a guided tour of Uwajimaya so you can learn about, and how to choose, ingredients for your own pantry.

This week's recipe is Lemongrass Shrimp Noodle Salad. Learn to make a delicious Southeast Asian noodle bowl that's perfect for summer weather. This recipe brings together a delightful taste in contrasts: chewy noodles, cool and crisp herbs, and sizzling stir-fry shrimp.  Teach me noodles!
