A Merry Christmas to you all and to great day(s) of eating!
 
So as you can imagine, our family celebrates holidays by eating together. Our celebrations have a nice blend of Asian and American traditions when it comes to our holiday meals. We always have sushi, sashimi with the turkey, ham and sides at the family Christmas Day potluck. This year Wayne and I are contributing a beautiful Japanese platter filled with a exceptional Chinese dish of pan-fried noodles with stir-fried baby bok choy, Asian sliced carrots, scallops and prawns. Our Bowlful of Noodle students will learn to make this dish on January 5th --Hong Kong Style Chow Mein. Plan to come with a friend and you will find it will be one of your favorites as it is ours. Even more fun, my wonderful sis-in-law was planning to have duck for Christmas Eve Dinner. Yes, fresh (first you steam it and then roast it Cooks Illustrated recipe) duck. But alas, my young niece comes down with the flu and we are playing around with Plan B, should we move the Christmas eve festivities to another house, and what about the Duck? Wayne of course suggests we just go to Chinatown and buy one done Chinese style. We could even get the special one with a head! Carol Anne's sister living in Australia also weighed in on that one and said yes great idea! But we ditched that idea for the secondary item that was already on the menu, ham.  I'll let you know what we really eat on Christmas Eve. At least it will be less dramatic than last year when I spent a couple days on making a Crochembushe for dessert and due to our iced in conditions had to shovel the whole alley (one city block) behind our house to get the car out. Can you relate? I was bound and determined to get to the dinner with my dessert! It was a nail biter to drive to Redmond that night but you know those things don't last to the next day...

Basic essentials, knife skills will save your time and energy

One of the most valuable classes we offer is knife skills, January 25. First off you do eat in class. More importantly, you will leave with a skill that is foundational to your enjoyment of the art of cooking. You will learn and practice so that you have confidence to do it in your own kitchen. Your results--less time in preparation, more confidence in the kitchen and less energy spent with improved results. You will be a better cook when you leave this class. Think of it as improving your golf swing so you can play and enjoy the game.
