What's for dinner tonight?
 
What is your daily routine. Do you run through the drive through with the kids or do you take the shopping cart and try and figure out what dinner will be tonight as you drive around with other frenzied shoppers at 5pm? Is dinner another chore or are you enjoying the experience?
 
Our next four enewsletters will provide hints and tips for making this part of your day something to look forward to with ways to put dinner on the table fast and easy whether you are cooking for one or for a family of five. Todays recipe is to take advantage of our tomatoes that are still coming off the vine with perhaps a new flavor Fennel. I hope  you enjoy it.
 
Is you pantry empty or full of things you will never eat? Fall is a good time to clear for the winter season. If things have been there for over 6 months, you may want to donate those canned and dry items to the food bank. Tomato Fennel Salad
Do you still have tomatoes in your garden, I do and this is a simple way to enjoy the robust flavor with a new fresh flavor of fennel. If you have some fennel left over, put it in your stirfry and cook or chop fresh into your salad greens. It is flexible, raw or cooked it tastes different each time you pair it. Have fun substituting other vinegars or juices as your pantry is stocked.
  
1 ½ pounds tomatoes
1 small fennel bulb
2 tablespoons extra virgin olive oil
Zest of 1 small orange 
2 tablespoons fresh orange juice
1 tablespoon cider vinegar
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
  
  1. Core tomatoes and cut into wedges.  Remove the top of the fennel and slice bulb very thinly crosswise with a knife or on a mandoline.
  2. Toss the tomatoes and fennel in a bowl with the olive oil, orange zest, orange juice, vinegar, salt and pepper. 
  3. Garnish with 2 tablespoons chopped fennel fronds, season to taste and serve. 

    Serves 6-8
