Building the 600 wallNovember's blessings began with the arrival of three new interns - Ted, Maria, and David. Ted, the son of one of RMS's owners, visited here as a kid, and he settled right in to work. Along with Ted came Maria, his charming girlfriend. They stayed for only two weeks, but left a lasting impression of eagerness to assist. Their biggest accomplishment was cleaning up the Rando yurpee, which had been unused for nearly a year. They fixed it up inside and out, and we're grateful to them for making that yurpee livable again.

The day after Ted and Maria arrived, David came to us from Cincinnati. David is an Eagle Scout and recent high school graduate, who came to Reevis as a better alternative to going straight to college. He is skilled and conscientious, and we are delighted that he plans to stay until May or June. That's David in the picture, helping to build a retaining wall around the apple trees by the duck pen.

During November we received forty-one visitors, including eleven for Thanksgiving dinner (we roasted a fifty-four pound turkey!). We also received a number of non-human visitors -- three wild turkeys, which have been hanging out with our own flock, and several skunks, who were the last of a parade of hognose, striped, and spotted skunks that dug in the garden and ate duck eggs throughout the summer and into the fall. We are sad to report that one small spotted skunk managed to get into the chicken coop late one evening, and killed one chicken: our beloved red hen Dorothy.

In other poultry news, we need to make a correction: Chuckie Chicken, whom we have been referring to as a hen, is not a hen! He began to show signs of roosterhood in October, and is now cockadoodling day and night. Maybe that old saying should be, Don't count your hens until they start laying eggs!

Peter kept busy this month, as always, teaching useful plants at Catalina State Park in Tucson and building the stone wall mentioned before, which beautifies the area around the house and gives us comfortable a place to sit and chat with visitors. (Much thanks to Sven, Karen, Robin, and David for their assistance!) Our weekend in Tucson for the plants class - an opportunity to talk with good friends Peter had not seen in many years - was joyful, and Peter plans to teach at Catalina again this spring.

Our spring schedule is in the works, and will be announced in the December newsletter (end of December) and posted on our website as soon as it is set. In the meantime, if there is a particular class you are interested in, please email us and let us know! We are much more likely to schedule a class we know there is interest for.

What We're Growing, Harvesting, and Eating

persimmons We'd like to share with you what's going on in the garden, the orchard, and the kitchen - the vegetables we're planting, the bounty (fruit, veggies, livestock, and herbs!) we're harvesting, and how we turn our harvest into nourishing, delicious meals.

What We're Growing
November means persimmons! Like our other fruit crops, we had a light crop of persimmons this year and lost much of it to the birds and honeybees ... but still managed to harvest about 500 pounds of luscious fruit. That's the end of our fruit season until apricots in early June! In the garden and greenhouse, our winter veggies are coming along, including broccoli, parsnips, brussels sprouts, kohlrabi, garlic, and spinach.

What We're Harvesting
While we're waiting for the winter vegetables to be ready, we are still harvesting several fall crops, including arugula, endive, bok choy, chard, collards, leeks, and beets. In November we picked the last of the apples (granny smith and yellow delicious) for our Thanksgiving pies, and we've put the winter squash into underground storage, where it should last until spring.

What We're Eating
Every meal at RMS is built around greens, whole grains, and meat or eggs. This time of year we are starting to eat more steamed greens than salad, and turkey or duck tends to be the meat on our plates. We are eating more root veggies, which we either roast or dutch oven ... and we are continuing to learn about soaking, sprouting, and nixtamalizing our grains to make them more nutritious and digestible.

Steamed Greens

Steamed greens are a staple at Reevis throughout the colder months - we serve them for both breakfast and supper. And they are simple to prepare ... just harvest a basket full of collards, chard, bok choy, turnip greens, and whatever other greens look good from the garden. We use the stems, chopping them first, into quarter-inch slices. Then we stack the leaves and slice them vertically and then horizontally to make approximately one-inch squares. Pile the greens loosely in a steamer, with about an inch of water in the bottom, cover, and put over high heat. When steam starts to come out from under the lid, turn the heat down to medium. Steam the greens until they are limp, or as done as you prefer them. We like to top them with olive oil, butter, sea salt, black pepper, and/or cayenne.

RMS is a 501(c)(3) nonprofit educational organization; donations may be tax deductible. We're currently wishing for the donation of a commercial-grade riding lawnmower, and a second solar water pump to replace the gasoline pump. We also appreciate prayers for rain!
