Nerd Stuff for Red Wine Lovers
This may be a little nerdy, but we have a new tool (toy) for the winery that went into action this morning enabling Kiepersol to adopt the délestage (pronounced del-ess-tahj) method - a French term for gently racking red wine to remove the seeds that sometimes result in harsh tannins.
In the photo above, the Zinfandel pulp, skins and seeds are drained into a long, flat screen sieve and the fermented wine (a.k.a. the good stuff) naturally drains out the bottom resulting in a far more comfortable drinking wine once bottled. Kiepersol has not produced a red Zinfandel varietal in the past, but expect to see this one on the shelves after aging 24-36 months.
