(Almost) Famous Recipes of the Month: Cool summer dips
| What do you do with cherry tomatoes after friends give you the 10th pint? That has been my dilemma over the years. We love them, but aren't every-day salad eaters and hate to see them spoil. In a recent Guideposts, I found what appeared to be the perfect solution. I knew it was as roasting tomatoes and garlic filled our house with the heavenly scent of Slow-Roasted Bruschetta. Absolutely delicious. (By the way, if you need some fresh basil, my herbs are on overdrive this year!) It gets even better...I've decided to go public with my killer Guacamole recipe. When I visit family in Albuquerque, they ask me to make it - it's that good! The trick is to find avocados that are perfectly ripe: the fruit will yield to gentle pressure when you press on the skin. If they are not ripe enough, they will be slimy inside (but will ripen in a few days at room temp). Too ripe and and the flesh will have unsightly black spots. Top of page

In Closing...

Michelle and I are getting ready to roll out a new campaign titled "Are you FISCALLY fit?" That will be the topic for a billboard on Highway 45 between Mayfield and Paducah. If you live in the area, we'd love to hear what you think about it.
Our new website should arrive at a computer in front of you by the end of September. The makeover is long overdue and we can't wait for all of our clients, friends, and readers to see the "new" MFP. We'll keep you posted!
