Hi, there! What's new and good? 

It's been a busy month (check out some of the things I've been working on below), but I've managed to start a daily meditation practice. While that might sound daunting, the One Moment Meditation program has made it rather simple. I've already gotten so much out of the practice and I know from the comments on Facebook that many of you have, too.

 

If meditation isn't your thing, that's okay. I encourage you to find something else that you can do every single day to give your body and mind a chance to rest, even if just for a moment. It really does make a difference in how you feel physically and your ability to cope mentally.

Like many GPers, I struggle with iron deficiency anemia. Unfortunately, iron supplements are hard on the GI tract. Enter blackstrap molasses. Blackstrap molasses is essentially what's leftover after cane sugar has been processed into table sugar.

Featured Recipe: Chocolate Chip Cookies

It's taken me a long time to come up with a GP-friendly recipe for chocolate chip cookies that measured up to the "real thing." I think these are pretty darn close!

GP-Friendly Chocolate Chip Cookies

 

 

  • 1 cup plus 2 tablespoons all-purpose flour
  • ½ teaspoon baking soda
  • 1/8 teaspoon salt
  • ¼ cup packed brown sugar
  • ¼ cup granulated sugar
  • ¼ cup butter, softened
  • 1 teaspoon vanilla extract
  • 1 egg white
  • 1/3 cup chocolate chips (I use Sunspire 42% cacao chocolate chips) 

Preheat oven to 375 degrees. Line a cookie sheet with parchment paper. In a small bowl, combine flour, baking soda and salt. In a large bowl, cream butter, sugar and brown sugar until light and fluffy. Add vanilla and egg white. Mix well. Add flour mixture, blending until just combined. Gently stir into chocolate chips. Drop by flat tablespoons on a cookie sheet.

Bake for 8 minutes. Remove and cool for 5 minutes on cookie sheet before transferring to wire rack.

 

Makes 24 cookies. Approximately 2.5 grams of fat and less than 1 gram of fiber each.
