What's Fresh Apples
We are so fortunate to live in the midst of apple country.
As long as apples are stored in a cool place, they will keep for months allowing you to extend your enjoyment. Here are some typical varieties you can find at the Market this time of year:
Honeycrisp: A favorite eating apple, it is exceptionally crisp and juicy. This apple is not recommended for pies.
Gala: Introduced in 1965 from New Zealand.
The Gala apple has pinkish stripes over a yellow background. This sweet apple is excellent for snacking, salads and sauces.
Jonagold: This apple is a cross between the Jonathan and the Golden Delicious apple varieties. It has a sweet taste with a touch of tartness. This type of apple is excellent for use in snacking, salads, sauces and baking, and is good for freezing and pies.
Fuji: The Fuji apple is a sweet, reddish-pink apple that was introduced to the U.S. from Japan. This apple is excellent for snacking and good in salads, pies, sauces and baking. The Fuji apple is not a good apple for freezing
Akane: The Akane is a cross between a Jonathon and Worcester Pearmin. Because of this heritage, the Akane is an excellent dessert apple, with a tart flavor and a distinct aroma. The Akane is best used for baking or desserts due to its slightly tart flavor and texture that holds up well when baked. The apple will hold its shape in pies, as well.

Featured Recipe
Apples pair nicely with both poultry and pork. This is a great one-dish dinner that is quick to prepare and delicious.
Sauteed Chicken and Apples
Ingredients:
4 boneless, skinless chicken breast halves
1 tablespoon olive oil
1 firm apple, cored, halved, and cut into 1/2-inch slices
1 cup apple juice
1 large onion, thinly sliced
1 garlic clove, minced
1 teaspoon fresh thyme leaves
1/2 teaspoon salt
Directions:
Pound each chicken breast half between 2 sheets of waxed paper or plastic wrap with a mallet until about 3/4 inch thick.
Heat oil in a large skillet over medium-high heat and saute the chicken until lightly browned on both sides. Add the apple slices, apple juice, onion, garlic, thyme, and salt. Cover and simmer 6 to 8 minutes or until the chicken is tender.
Remove the chicken, apple slices, and onion to a serving platter and keep warm.
Bring the remaining juices to a boil for several minutes, until slightly reduced. Pour the sauce over the chicken and serve. |
