What gorgeous fall weather we've been having in New England! I've really been enjoying the colorful leaves this year as I ride my bike around town. 

Who has time to cook anymore? Read this article to see why spending time in the kitchen can put you back in control of your food and health.

The Shiatsu workshop I taught last weekend was a success! Since a number of people have asked if I will be teaching another one, I will be scheduling one after the holidays. I will also be scheduling some nutrition talks in the near future. I will keep you posted!

Why Cook?

I hear a lot of people say that they don't have time to go to the grocery store or cook food for themselves or their family. Many people's grocery carts seem to be filled with packaged food that is conveniently ready for the freezer until it is time to pop in the microwave for dinner.

Time is an interesting thing. We each have 24 hours in the day, no matter how rich or poor, young or old we are. What do we choose to do with those 24 hours? What do we have time for and what do we value? Do we have time to work overtime? Do we have time to watch television? What are the things that keep us so busy that we don't have time to cook for ourselves?

Food is a primal need that nurtures and feeds us in more ways than just physically. When someone lovingly prepares food for us it makes us feel loved, taken care of and comforted. When we prepare food for ourselves, we are taking care of ourselves in a way that a frozen meal or restaurant food can never replicate.

When we eat out, we have no idea what's in the food. It may taste good, but what's in it? Is it filled with artificial flavors, bad oils, low quality ingredients? Was the food prepared with extra fat, salt and sugar?

When we prepare our own food, we are taking control of what we put in our body. We are in the driver's seat. We can choose to use fresh, high quality, organic ingredients. We can choose to cook out of love, rather than duty.  The food will not only taste delicious but it will be more affordable.

Roasted Root Vegetables
 
This simple but delicious recipe uses root vegetables, which are plentiful at the Farmer's Markets right now. Root vegetables are nutrient rich and very grounding, supporting our bodies as the days get shorter and colder.  They are especially sweet when baked, satisfying our sweet tooth in a healthy way.

Prep time: 10 minutes
Cooking time: 25-35 minutes
Yield: 4-6 servings

Ingredients:
1 sweet potato
2 parsnips
2 carrots
2 turnips or 1 large rutabaga
1 daikon radish (or substitute/add in your favorites, like squash)
olive oil
salt and pepper
herbs: rosemary, thyme or sage (fresh if possible)

Directions:

  • Preheat oven to 375 degrees.
  • Wash and chop all vegetables into large bite-sized pieces.
  • Place in a large baking dish with sides.
  • Drizzle with olive oil; mix well to coat each vegetable lightly with oil.
  • Sprinkle with salt, pepper and herbs.
  • Bake uncovered for 25-35 minutes until vegetables are tender and golden brown, checking every 10 minutes to stir and make sure veggies are not sticking.
Note: Any combination of vegetables will work. Roasting only one kind of vegetable also makes a nice side dish.
