Mediterranean style grilled fish
Dietitian's tip: Instead of the usual breaded and fried fish, this fish is grilled, Mediterranean style. You may substitute swordfish, halibut, sea bass or any other whitefish, and the nutrients are similar.
SERVES 4
Ingredients 1 tablespoon minced garlic 4 tablespoons chopped fresh basil 1 tablespoon chopped fresh parsley 2 tablespoons lemon juice 4 cod fillets, each 6 ounces Cracked black pepper, to taste 4 green olives, chopped 4 thin slices lemon
Directions Prepare a hot fire in a charcoal grill or heat a gas grill or broiler. Away from the heat source, lightly coat the grill rack or broiler pan with cooking spray. Position the cooking rack 4 to 6 inches from the heat source. In a small bowl, combine the minced garlic, basil, parsley and lemon juice. Place aluminum foil on a baking sheet or a grill-pan designed for grilling seafood. Spray with cooking spray. Place fish on aluminum foil and spray with cooking spray. Top each fillet with equal amounts of the garlic mixture. Sprinkle with black pepper. Grill over medium heat, turning once, until the fish is opaque throughout when tested with the tip of a knife, about 10 minutes. Garnish with green olives and lemon slices. Serve on warmed plates.

BAC FIT TIP
If you want to benefit from an aerobic workout too while weight training, try supersets. This simply involves taking two exercises (not for the same muscle group) and performing one after the other with minimal rest. We recommend pausing for a maximum of 45 seconds between sets and/or machines. The continuous effort helps you achieve an aerobic state. Biceps and triceps are excellent body parts to superset. |

BAC NUTRITION TIP |
Enjoy Watermelon!
It's low in calories (only 92 calories per 2-cup serving) and it fills you up because it's 92 percent water, which will also help to rehydrate your body on a hot summer day. On average, 1 cup of watermelon has 7.5 to 10 milligrams of the antioxidant lycopene - that's about 40 percent more than is found in raw tomatoes. Additionally, watermelon is a good source of vitamins A (1 cup has almost 20 percent of your daily values) and C (20 percent of daily values), and it also contains potassium, vitamin B6 and thiamin. Look for firm, juicy, red flesh without white streaks and skin without cracks, bruises or mold. The best way to tell for sure that a watermelon is ripe is to ask your grocer to cut a plug (a small triangle that will show you how the inside looks) out of the fruit.

Ask the Trainer
Shannon Fredeen
What is functional training?
|
| The term functional training has been floating around the fitness industry for a while now. But what does it mean and how does an individual train for function. The type of training an individual does is specific to that individual's goals. The more specific your goal the more specific your training. Thus the work out of an athlete looking to improve performance compared to the individual competing in a bodybuilding contest is very different. However, the vast majority of gym members want to lose weight, look good, and or feel better. With those goals in mind they suit up in their favorite exercise gear and hit the gym!
Feel free to contact Shannon with any questions @ 668-3838 or email "Fit Questions" to Shannonmarie_runs@msn.com
Shannon will answer one question every month submitted by a member!
That member will receive a free water card good for 5 waters at either BAC location!
