Eggnog Muffins
For those of you who may have missed this recipe on our Facebook Page, enjoy. Become a fan of the inn or friend of Jan so that you don't miss the special offers, recipes, and news.
Guests voted them "a keeper" and Joel said - "Wow, these are good - and I don't even like eggnog!" The only change I'd make is to toast the pecans (I usually do but forgot!)
2 cups flour 1/2 cup sugar 1 tablespoon baking powder 1/2 teaspoon salt 1 cup eggnog 1/4 cup water (yes, I agree it's weird but the recipe needed it) 1/3 cup butter, melted 1 egg 1 teaspon vanilla extract 1 teaspoon freshly grated nutmeg (do not cheat here) 1/2 cup toasted pecans, chopped
Preheat oven to 400 degrees. Combine all the dry ingredients in a large bowl. Mix wet ingredients in small bowl. Dump them together until just incorporated. Spoon into muffin pan or liners, sprinkle top with a little sugar. and bake about 15 minutes or until a toothpick comes out clean.
